I’ve been dreaming of Green Eggs and Ham for weeks now. Does that sound strange? What’s weirder, it’s not even my favorite Dr. Seuss book!

Technically, this is a “Spinach and Ham Eggs Benedict with an Avocado Cream Sauce,” or maybe “Avocado Hollandaise Sauce,” recipe, but Green Eggs and Ham might just be catchier. What do you think?

I’ve wanted to make quiche for the longest time but never got around to doing so until now. Since it’s my first time making it, I thought that it was best to start with the basics: spinach and artichoke.

I love that combination, don’t you? Spinach and artichoke complement each other so well, and the flavors aren’t too overwhelming.  I chose not to do a crust this time because my younger sister doesn’t like crusts (not on her quiche, her pies, or her pizzas!). But that’s also a good thing! One, it means that we don’t have to do those extra steps of making a crust. Two, you can splurge on more of the filling. Three, it’s gluten-free!

Some of my favorite sauces, ones that I’m completely addicted to, include hoisin sauce and peanut sauce. It’s really hard to describe hoisin sauce if you haven’t tried before. It’s sweet, salty, and tangy. You’ll often find them as dipping sauces at Vietnamese and Thai restaurants. Hoisin sauce and peanut sauce, and occasionally a combination of both, are served with spring rolls at Vietnamese restaurants. In Thai cuisine, peanut sauce is a dipping sauce served with BBQ chicken skewers as well as a sauce for some of their entrees. They’re so delicious and creamy, and completely addictive. At least, to me.

So of course, I want to use them as much as possible.

They’ve been around forever, obviously, but it’s my latest discovery, and newest obsession, which means I have to share it with you.

These frozen bananas are a must for this ice cream recipe. Creamy and thick once blended, frozen bananas give that “ice cream” consistency. The acai puree is just for flavor and color. Oh, and of course, the antioxidants and vitamins. One bite of this deliciously healthy ice cream and you’ll be hooked!

Loaded Chopped Salad

A refreshing and healthy salad filled with lettuce, baby spinach, radicchio, arugula, deshelled edamame, sweet corn, grape tomatoes, toasted walnuts, and dried cranberries. Tossed and chopped into fine pieces, this salad is amazingly delicious with so many flavors and texture that no dressing is needed.

Salads are one of my favorite meals. I can eat them all day long and never be sick of them because they’re so versatile.

What?! It’s just a bunch of raw vegetables. What’s so good about them?

Every salad I eat is different. Unless of course, it’s a Caesar salad, or a Cobb salad, or Southwestern salad, or a Garden salad, or well, you know what I mean. But even then, the quantity of each ingredient is different depending on who makes them, and that also changes the taste. If you added extra bleu cheese, wouldn’t your salad taste different? If you added extra corn or beans, doesn’t that make a difference?
