Frozen Coconut Banana Treats

Mashed bananas mixed with creamy coconut milk and a little bit of crushed peanuts then topped with a chocolate drizzle for a delicious frozen treat. Easy to prepare, this coconut banana frozen treat will be perfect as a healthy snack on a hot day.

So my chocolate drizzle isn’t the best… But it’s so difficult to drop melted chocolate on frozen treats! They freeze instantly, and sometimes even before they land on top. And this is the result.

While the chocolate is a mess, I can guarantee that these healthy frozen coconut banana treats are delicious and easy to prepare. The hard part is waiting for them to freeze and of course, the chocolate drizzle.

I hope you’re in the mood for something a little different this weekend! Have you ever tried a mango salad at a Thai or Vietnamese restaurant? Or even a papaya salad? They’re pretty similar.

Most of the time, we eat mangoes without any enhancements (although it’s really good with Tajin seasoning too, just saying). Mangoes are so sweet and juicy they don’t need anything else to make them wonderful. You can find mango in salsa or even as an add on for salads. Can you tell that I’m on a breakfast bowl kick? They’re so tasty, and they’re such a great pick me up that I just can’t resist!

If you had no idea what pitaya is or have never heard of it before, don’t worry, you’re not alone. I didn’t know what it was either when I first saw it on the menu at Nekter Juice Bar. I had to ask the guy at the register. And I’m so glad that I decided to try it! It’s one of the most amazing blended fruit bowls I’ve ever had. And I’m so happy that I can share my simplified version of the pitaya bowl with you and my friends at Fiesta  Friday.

Lately, I’ve been obsessed with acai bowls. Have you had one before?

Acai bowls are basically acai puree blended with other fruits, and occasionally some nut butter, to create a smoothie that’s thick like yogurt or ice cream. Then they’re topped with granola, a variety of fruits, and sometimes coconut flakes. They taste so amazing and are very healthy, filled with tons of vitamins and antioxidants. They’re served in a bowl and eaten with a spoon.
