Cajun Corn and Cheese Stuffed Zucchini Boats

Zucchini boats stuffed with Cajun seasoned sweet corn and cheese. Each bite will be amazingly delicious with warm melted cheese and sweet juicy corn. Cajun Corn and Cheese Stuffed Zucchini Boats | Cooking with a Wallflower Before I get started with my usual spiel, I wanted to ask you guys if you’re having trouble accessing my site in any way. I’ve received a few messages from readers saying that they’re not able to see my blog properly, or they’re having trouble following email notifications back to my blog. I’m actually self-subscribed to my blog just so that I can see what my readers are seeing and what I need to fix. I’ve checked on multiple devices too. So far, I’m not seeing any of issues described. I may have lost subscribers this way, I’m not sure. But let me know if you’re experiencing any problems accessing my blog. I’d love to be able to help fix it if I can.

Let’s get to the recipe now =)

Life of a Wallflower

Life of a Wallflower, 17 – CDA Presents Convention

Towards the end of last week, the California Dental Association held a convention at the Moscone Center in San Francisco. I opted to go because one, I have never been, two, there were a few lectures that I was really excited to hear (you’ll see why in a bit), and three, freebies (who doesn’t love freebies?).

There’s also the matter of networking. Cross your fingers for me. I’m hoping that I’ll at least have a temporary or part time job in dental hygiene soon.

CDA Presents Convention | Cooking with a Wallflower

The CDA Presents convention is basically a place for dental professionals of California to gather, listen to lectures about new research and discoveries, and explore dental related products. I have never been so I didn’t know what to expect.

Avocado Coconut Banana Bowl with Roasted Figs and Walnuts | Cooking with a Wallflower

We have so many ripe figs in our refrigerator.  So tonight I thought I’d share a recipe that included figs as an ingredient.

My grandma’s neighbor has this huge fig tree in his front yard, but he doesn’t like eating them. So instead, he leaves a wooden ladder underneath the tree and let his neighbors pick as many as they want, which means during the summer months when figs are in season, we pick at least a bucket full each week. Sometimes more depending on how many are ripe and within reach. I won’t include photos because it’s not our house, but if you’ve been fig picking before, you’d know it’s no easy task.

Avocado Tomato Basil Toast | Cooking with a Wallflower

It’s been an eventful couple of days for me. I’ve been busy attending the California Dental Association convention at the Moscone Center in San Francisco. There was just so much to learn, to try, and to see! I was super excited to discover new products that would be beneficial for me as a clinician and for my patients as well, but enough of that for now =)

In tonight’s post, I’m going to share with you the yummiest, most flavorful avocado toast ever! Well, at least, it feels like that to me. I’m certainly not stingy with the amount of avocado I place on my toast. The higher I pile the mashed avocado onto my slice of bread, the happier I’ll be. I really can’t resist avocado in any form.

I hope you had a wonderful Labor Weekend! What did you guys do to celebrate? My family didn’t really do anything for Labor Day weekend, mostly because it always coincides with my youngest sister’s birthday. And this year, she’s finally turning 21! So we took her out to dinner to celebrate a little early, not that we wouldn’t have if she wasn’t turning 21, but it still felt a little more special. Her birthday isn’t until September 3rd, but it’s easier to celebrate over the weekend when we’re all mostly free. =)

Life of a Wallflower

Life of a Wallflower, 16 – Filoli

The other day my friend, Shirley, and I went to the Filoli estate in Woodside, about 30 miles south of San Francisco.

Filoli | Cooking with a Wallflower

Before I share photos from my visit, I have to confess that I absolutely love history. Some people might find it boring, but I love learning about how people lived in the past. Seeing historical artifacts, or objects that belong to people in the past, allow my imagination to run wild. I can picture the people going through their everyday lives, getting ready for parties or debut balls. I love hearing the stories that come with the house or the silverware, or the painting. Does anyone else feel the same way?

Cheesecake Filled Raspberries

Fresh sweet raspberries filled with soft vanilla cream cheese and topped with graham cracker crumbles. Sweet and tasty, these no bake mini treats are perfect as a dessert.

Cheesecake Filled Raspberries | Cooking with a Wallflower

I can’t decide what my favorite dessert is. Sometimes it’s macaron and other times it’s cheesecake. For sure, it’s one or the other. I just can’t decide between them because they’re both so good!

Today I’ll be focusing on the cheesecake aspect. If you haven’t tried my Mini Vanilla Cheesecake with Sprinkles on Graham Cracker Crust, you’ll have to go see the recipe. So simple and so delicious. And you can have one in about a half hour. Okay, maybe a little longer since you have to wait for it to cool… But if you really want something even quicker and easier, you’ll have to try these cheesecake stuffed raspberries. No baking necessary.

Avocado Acai Parfait

A parfait with alternating layers of acai blended with berries and avocado blended with frozen bananas to create a delicious and nutritious breakfast or snack. Topped with granola and fresh fruits, this parfait has so many flavors and texture.

Avocado Acai Parfait | Cooking with a Wallflower

Another breakfast recipe to share with you today!

I’m really loving all these parfaits, bowls, and smoothies. They’re so amazingly delicious, addictive, and nutritious. What more can I ask for?

This particular parfait is special. It’s filled with tons of antioxidants from the acai and vitamin C from all the berries and fruits. The creaminess and richness of the avocado keeps us full and satisfied. And if you’re like me, then you must be as addicted to granola as I am. I love the slight sweetness of granola and the additional crunch for texture. I can’t resist them! I keep adding more and more to my parfait.

Basil Garlic Noodle

Garlicky, buttery, slightly spicy noodles tossed with sliced mushrooms and refreshing basil for a tasty Asian inspired dish. Each bite will be bursting with flavors, keeping you hooked until there’s nothing left on that plate.

Basil Garlic Noodle | Cooking with a Wallflower

For those of you who have followed me these several months, you know that I love my noodles. Serve me noodles, and I’ll be happy. I also love love love my garlic. I like to add garlic to all my dishes. Well, within reason, of course. I don’t think you’d appreciate it if I added garlic to my desserts. I wouldn’t either. But oh my gosh, two of my favorite ingredients together in one dish? Drool worthy.

While this dish is somewhat similar to my Spicy Garlic Noodle, it has an Asian twist. This Asian inspired pasta dish tastes absolutely amazing. You have the aromatic flavor of garlic, the refreshing fragrance of basil, sliced mushrooms, and just a little bit spicy from the chili pepper. It’s soo good, especially with the addition of tamari. I could sit there and eat this all day long without sharing, that’s how much I like this dish.
