It’s Monday, my least favorite day of the week. There’s something about this day that always seems so stressful. Maybe it’s because we just came from a relaxing weekend? But that doesn’t quite work either because when I have Mondays off, Tuesdays don’t seem as daunting. And you would think that if I had a long weekend, Tuesdays would be difficult, right? But it doesn’t seem that way so I think it’s just Monday itself that I don’t like? Is that weird?

But that’s okay because I get to share this amazing recipe with you today. This dish is vegan and can be gluten free too if you use gluten free soba noodles.

I love soba noodles. I always have them on hand for those days when I’m too lazy to cook. It’s like pasta. You always have to have them on hand for those late night dinners where you don’t want to do anything fancy.

Some of my favorite chocolate bars are from Jade Chocolates. Mostly because they have Asian inspired flavored chocolates such as Genmai (roasted brown rice with roasted green and jasmine Tea), or Krakatoa (Cracked black pepper and lemongrass), or Terracotta (tamari almonds and pink sea salt). They’re wrapped in washi paper, and inside, you find chocolate bars with such gorgeous designs, like this.

Wallflower Weekly Finds, 61

Last weekend, I finally had the chance to go back to the Farmer’s Market at the SF Ferry Building.

And guess what I found? Lots of asparagus and artichoke. <3

But what really caught my attention? These gorgeous purple asparagus.

Omg. Do I really need to say more?

I’ve been obsessed with honey chipotle for some time now, and while it’s really just one sauce that doubles as a marinade, there are soo many uses for it, which totally makes my life easier. For this recipe, instead of marinating chicken in the honey chipotle sauce, I used large shrimp. You can use jumbo prawns too. The bigger the shrimp, the tastier it’ll be because those shrimp will be tender and succulent, just the way I like them. And hopefully you will too.

These honey chipotle shrimps are slightly smoky, spicy, and sweet. Together, the flavors are similar to a barbeque without all the hassle of firing up a grill. Since shrimps are easier to cook and has less of a surface area than chicken, you don’t need to wait long before the shrimp absorbs all that flavor. That means you can make this dish for dinner without having to plan in advance. Dinner menu set!

Of course, no dish is complete without a side. And I thought the perfect side to accompany these succulent shrimp is roasted garlic broccolini. I mean, tender vegetables smothered in roasted garlic? How much better can dinner get? I can devour roasted garlic anything by itself.

I know not everyone can get their hands on broccolini, which is a hybrid of broccoli and Chinese broccoli, and that’s okay. Because practically any vegetable will work in place of broccolini. You can try using broccoli, cauliflower, asparagus, brussels sprouts, and so many other vegetables. The possibilities are endless.

Lately, I’ve been obsessed with my spiralizer, and chipotle peppers. So of course, I had to combine my two latest obsessions into one dish!

Zucchini Noodles in Spicy Chipotle Tomato Sauce with Asparagus and Mushrooms | Cooking with a Wallflower

I’ve tried zucchini noodles in so many different ways, and I love them all, but my favorite so far is when they’re smothered in tomato sauce. Yes, smothered. Because when I eat any pasta, or noodles, or anything with sauce, I like them served with a ton of sauce. This is no different. And since this dish is all vegetables, I don’t feel guilty for keeping it all to myself. =)

This spicy chipotle tomato sauce is spicy and slightly smoky and reminds me of a warm bowl of hearty chili. So if you love eating chili, you’ll totally love this version of tomato sauce. It’s super easy to put together, and you can have your meal ready from prep to table in just 20 minutes.

Ten years ago (what!), when I started college right after high school, I lived on my own for the first time. During my first year, I lived in the dorms so I had to buy vouchers for the dining hall, but I always kept ramen noodles in my room. Just in case of emergencies. You never know when you need a midnight snack. Or study food. I eat. A lot. Despite what my family and friends believe.

During my second year, I lived off campus in a townhouse with housemates. I cooked some of my meals, but to be honest, most of the time, I reheated food that my parents packed for me every week. Or I’d make my own salads and sandwiches. And on occasion, I looked up easy recipes to make either from the stacks of recipe cards I collected from Walmart which I alphabetized (I know, I’m such a nerd. lol) or browsed through recipes online or in magazines.

Can you see the beginnings of this blog somewhere in there?

Now, looking back, I wish I had recipes like these to turn to. Something simple that doesn’t take up too much of my time. My recipes, for the most part, are meant for busy people or beginners in the kitchen. Whether you’re a college student cramming last minute for that exam or a busy parent trying to get dinner on the table after work, these recipes are meant for you.

So today, I’m sharing with you a ramen recipe that’s easy to make and filled with a ton of vegetables. As you can see, I used the instant ramen noodles rather than the authentic Japanese ramen because I know we’re more likely to have the instant ones on hand. Just discard the seasoning packets =)

One of my favorite cuisines is Thai. When you’re obsessed with food, it’s really hard to narrow down your favorite cuisine because there are just so many! How can you pick between that spicy Thai green curry and that Japanese teriyaki chicken? Or that Vietnamese garlic noodle and that chicken Madeira? You really really can’t.

I do really love my Thai food though. It might be that my dad is a chef at a Thai restaurant in San Anselmo and that I grew up eating a ton of Thai dishes. But it could also be that I love the taste of all the spices and flavors in their dishes. So many Thai dishes have a combination of lemongrass, lime kefir leaves, coconut milk, and chili peppers. It’s so refreshingly different.

Oh, I think I have the perfect recipe to share with you guys today!

I’m always looking for recipes that I can use for other dishes too. It saves so much time when you can use one dish and pair it with so many others. And this honey chipotle shredded chicken does just that!

While it’s super easy to make and prepare, it does require a little bit of planning ahead because you have to allow the chicken to marinade and the flavor to develop. But trust me, the wait is sooo worth it! You can quickly put it together the night before or even toss everything together in the morning before work or school. It’s seriously easy! Just 5-7 minutes of your time!

Once you try this honey chipotle chicken, you’ll want to make it ahead so that you can add to your salads, to your sandwiches, to your tacos, and pretty much whatever you like.
