I love to snack. Chips or bread with dips are almost always my go to snack.

With a ton of cream cheese sitting in the fridge, I knew that I had to use them for something. And when I say a ton, I mean a couple pounds worth. My mom bought the Costco size container, and if you’ve ever stepped foot into Costco, you know everything is much bigger than you really need them to be. And you always leave with a cart full of stuff you don’t need. So in the next several weeks, you’ll probably see some recipes featuring cream cheese as an ingredient. Like dips, cheesecakes, pastries, hint, hint.

This creamy kale artichoke dip is adapted from my Spicy Spinach Artichoke Dip, and it’s every bit as delicious. I love dipping tortilla chips into this and getting kale and artichoke in every bite. Or for a more filling snack or appetizer, I like to spread this dip on bread and eat them that way. With Thanksgiving just around the corner, I like having dips like this prepared beforehand. That way, I can have something for my guests to munch on while we’re finishing making dinner. Trust me, it goes a long way. No one wants a hungry and grumpy person during the festivities, right?

I definitely can’t.

Soo many things have happened in these past two years. Good things. Big things. When I started this blog back in 2013, I only wanted to take my mind off the stresses of life. I had no idea that this blog would be where it is today. Or that I would learn so much in these last two years.

Thank you so much for all the support you’ve shown me and this blog.

I hope you had a fantastic Halloween! We had tons of trick-or-treaters ringing our doorbell last night. I completely forgot that Halloween fell on a Saturday this year which means that more kids are out and about. Thankfully we had enough treats for everyone!

And for those of you who live in the U.S., how are you adjusting to Daylights Savings? I swear, it always throws me off. I enjoyed the extra hour in the day, but still, I really don’t like that it gets dark so much faster now. I mean, the sun disappears before it’s even 5!

Okay, so, with the holidays around the corner, like literally, I wanted to venture more into baking. Baked goods are always great for breakfast and as gifts for family, friends, and coworkers so I wanted to test out a few more seasonal baked goods recipes.

About two weeks ago, I decided to order this doughnut pan. I love that it makes only six so I wouldn’t have too many doughnuts waiting around to be eaten, and they’re pretty inexpensive. I’ve always had a weak spot for doughnuts despite how terrible they are for you, and I thought it would be fun to try to make some at home. By baking the doughnuts rather than frying them, these homemade doughnuts are bound to be healthier, right?

Happy Halloween!

What are you doing this weekend? Any trick-or-treating? Any parties? Any costumes? I’d love to hear from you!

I don’t usually do anything for Halloween. Maybe it’s because my sisters and I never dressed up as kids so as we grew up, Halloween isn’t as big of a deal.  I’m actually much more excited about the start of the Countdown to Christmas on Hallmark Channel. Please tell me someone feels the same way so we can talk about these movies in the weeks to come. I pretty much spend every weekend up to Christmas anticipating the release of a brand new Hallmark Original Christmas movie each weekend. I don’t care how predictable these movies are. They all have happy endings. And that’s really all I’m looking for in Christmas movies. Because who doesn’t want that nice warm feeling during the holidays? Does anyone else do that? Or is it just me? This only applies to movies. lol. I get tired of Christmas songs fast.

It’s autumn! Not that you didn’t already know that. But I think it has to be my favorite season. As much as I love summer for the gorgeous weather and spring for all the flowers, nothing can outdo autumn in my eyes. All those pretty fall foliage. The trees turning into vibrant shades of reds, oranges, and yellows; the leaves decorating the ground with their brilliance, the crunch of the leaves under your booted feet, *sigh* I love it. I can stare at the trees all day. Well, if I lived anywhere other than in the City, where there are absolutely no seasons whatsoever.

But, oh my gosh. Autumn also means it’s the season for squash. All sorts of squashes. But, my ultimate favorite has to be butternut squash. I love the creaminess and the natural sweetness of these butternut squashes. And, minus the cutting, they’re easy to prepare. Over the past (almost) two years, I’ve featured butternut squash in multiple recipes, and I’m about to do it again.

These roasted maple sage butternut squash toast are so delicious. You get the hint of maple and sage, a combination that works so well for fall. And roasted butternut squash becomes puree-like after being roasted so they’re relatively easy to spread on toast. Top them with baby greens such as baby mustard green, baby kale, or baby arugula and just a sprinkle of pomegranate for a pop of color. You have an appetizer that can easily be put together for your family and friends. Or if you’re me, you can eat them as a snack.
