Teriyaki Glazed Roasted Brussels Sprouts | Cooking with a Wallflower

I just realized I haven’t posted any Brussels sprouts recipes lately. It’s time to remedy that.

With all the Thanksgiving festivities that’s been taking place, I know I overindulged in all things fried and all things sweet. So it’s time to eat a little healthier. At least, until for a few days until I start eating for Christmas.

I have a love for Brussels sprouts that I know isn’t shared by everyone. And that’s okay. That means there’s more for me. =)

Teriyaki Glazed Roasted Brussels Sprouts | Cooking with a Wallflower

I don’t know if you’ve had roasted Brussels sprouts before, but if you haven’t, then you really need to try them. Roasting these little vegetables, or any vegetables for that matter, brings out a rich caramelized flavor. Which I absolutely love. And if you’re still skeptical and worried that that bitter taste is still present, we’re going to glaze these Brussels sprouts with teriyaki sauce.

Now, these roasted Brussels sprouts have its natural caramelized flavor with the sweet and savory taste of teriyaki sauce. Soooo good.

Oh! I hope you’ve recovered from your Thanksgiving feast and any Black Friday shopping you might have done. I’m just slowly coming out of my food coma.

We had soo much food, many of which were a combination of Asian cuisine and traditional American cuisine. In other words, we had chow mein, jelly fish salad, hot and sour soup, and che Thai, a dessert made of fruit cocktails and half and half. That also means we get to have a quiche filled with kale, artichoke, sun-dried tomatoes, and mushrooms. And an apple cranberry pie, pumpkin pie, mashed potatoes, mac and cheese, garlic bread, and turkey with gravy. All buffet style because we just don’t have a table long enough to seat all of us.

Turkey Pho

Vietnamese pho filled with shredded turkey and then topped with thinly sliced red onions, cilantro, and bean sprouts. This turkey pho is the perfect warm meal to chase away the cold.

Turkey Pho | Cooking with a Wallflower

There’s something about turkey and soups that I can’t seem to resist.

Just two days ago I posted spicy miso ramen using turkey, and today, we’re having chicken pho, but instead of chicken, we’re using leftover turkey from Thanksgiving.

Roasted turkey already has so much flavor on its own. But when they’re added to the soup, oh my god. The soup has so much more depth. I can eat this for days. For reals.

Turkey Pho | Cooking with a Wallflower

Traditional pho broth takes hours to make. You add spices, onions, ginger, and seasoning to the broth and allow the soup to simmer for hours so that the flavors have a chance to develop. I have no patience for that. I mean, if I want pho, I want it now. I don’t want to wait several hours before I get to eat it. By then, I probably have cravings for something else. So, this version of pho can be made in about 40 minutes. So simple to make and so very delicious.

I’m pretty sure this will become one of your go to recipes to keep warm this winter. =)

Leftover Turkey Spicy Miso Ramen | Cooking with a Wallflower

Just a few more days until Thanksgiving! Are your menus set yet? What will you make for Thanksgiving dinner? I’d love to hear from you.

Every year, we have tons of leftovers from Thanksgiving dinner. We split the food between families and eat leftovers for days. I don’t usually do anything fancy with mashed potatoes, chicken pot pies, and mac and cheese. We just reheat them and eat them as is. But when it comes to turkey, because there’s so much left, and they work so well with other dishes, we like to use them instead of chicken with other dishes, like soups. We use turkey carcass to flavor broths to make soups, and we use turkey meat as an ingredient.

Leftover Turkey Spicy Miso Ramen | Cooking with a Wallflower

In case you need ideas for your leftovers, I thought I’d share with you this spicy miso ramen using your leftover turkey. I have a major obsession with ramen. The Japanese variety. I can eat ramen for days and not get tired of them. They’re that good. This version isn’t quite authentic, and eventually, I’ll share a more authentic version, but this ramen will definitely satisfy both your craving for ramen and use up your leftover turkey.

Can you believe that in just a few days it’ll be Thanksgiving?

Since Thanksgiving is just around the corner, I wanted to take the time to talk about something important. For me, Thanksgiving is about giving thanks and appreciating what we have. It’s also a holiday that revolves around family and food.

Around this time, when we walk into grocery stores, we see bins set near the doors for food donations or signs asking for money donations at the register.

If you can spare even a little bit, please consider donating. Every little bit helps. Every dollar can bring food to someone’s table. Just think how sometimes your grocery store has sales on canned soup, like 10 for $10, or boxes of pasta, also 10 for $10. You can make a difference in someone’s life.

Can you believe that it’s almost Thanksgiving?

I feel like fall just arrived and all of a sudden, we’re coming to an end.

Thanksgiving Recipes

But I’m super excited for Thanksgiving! There’s always plenty of food.

With my family, we always spend the morning and early afternoon cooking all the sides and desserts, then we set them at a long table so that we can grab food, buffet style. Sometimes we invite friends to come over. Other times, not. It just really varies. And we never make the turkey at home. At first, it was because we didn’t have a working oven, and later, it’s too much of a hassle. There’s just no room to defrost the turkey. And that’s fine for us. It means we have plenty more time to make all the sides and desserts.

Pumpkin Coffee Milkshake

Pumpkin puree, pumpkin pie spice, coffee, and soy milk blended into a delicious milkshake. This pumpkin coffee milkshake is the perfect pick me up for fall.

Pumpkin Coffee Milkshake | Cooking with a Wallflower

The moment it turned October, Pumpkin Spice Latte burst onto the scene. It’s almost everyone’s go to drink during the fall.

I love the taste of coffee (and pumpkin), but unfortunately for me, the caffeine in coffee gives me a headache. Which is the strangest thing ever, because while I was studying for exams in school, I used to drink coffee all the time and had no issues. But once I was done with school, coffee means headaches and fast heart rate.

So, rather than a pumpkin spice latte, or a pumpkin frappucino, because I can’t have any, sadly, we’re getting a Pumpkin Coffee Milkshake. I know, I know, it doesn’t have as nice of a ring to it, but I swear, it’s just as good.

This version tastes like pumpkin and coffee, but it’s mostly soymilk. You can use regular milk or almond milk too. It’s just your preference.

Spicy Chicken Sushi Roll

Spicy Chicken Sushi Roll | Cooking with a Wallflower

I know how complicated this looks, but I promise you, it’s not hard. And before long, probably after the first roll, you’ll be able to make your own sushi rolls right at home filled with your favorite ingredients.

Spicy Chicken Sushi Roll | Cooking with a Wallflower

A few weeks ago, I took a sushi making class with my coworkers. It was such a fun experience. And I definitely learned a lot of tricks to making sushi. From how to roll sushi to how to cut them. Because it seems I’ve been making sushi rolls wrong all this time. No wonder the rice stuck to everything. And no wonder it was so messy and complicated that I quit after making it just once years ago. It was such a mess to clean up I didn’t want to try again. At least, I still kept the bamboo sushi rolling mat. It comes in handy now that I know how to make them properly.

Spicy Chicken Sushi Roll | Cooking with a Wallflower

This spicy chicken rolls is filled with spicy chicken, sliced avocado, and cucumber. The ingredients are wrapped in a layer of seaweed, rice, and furikake (rice seasoning). These rolls are simple to make and so delicious. Once you know how to make these, you’ll want to change the ingredients up and make your own flavors. Because sushi really only requires rice. Everything else can be customized.

One of my favorite cuisines is Korean. I really really love my food spicy, and Korean foods offer that. Plus, there’s something about all those little side dishes that come out before the entrees that makes it so much fun to eat. And of course, all those free refills.
