I hope it’s been a relaxing weekend for you. I haven’t had a weekend where I had no work or events planned for weeks now so it was nice to have a low key one. Went to the farmer’s market Saturday morning, stopped at the mall for a (or half a dozen) black honey matcha cheese tart(s), and then caught up on some of my favorite fall shows. At the moment, I highly recommend 9-1-1. Has anyone seen it?

Happy Monday!

It’s Fleet Week in San Francisco, which means these last couple days our afternoons have been filled with the sounds of the Blue Angels soaring by.

I work in the Marina district so we’re right where the Blue Angels fly, and the sound can be pretty deafening, but it’s definitely fun to watch when you can get a glimpse of them performing in the sky.

So much has happened in the last few weeks as you’ve seen through short updates on the blog and through Instagram. I am so behind in everything! I wanted to share photos of my trip to Southern California, of Brit+Co Re:Make, of Eat Drink SF. Did that happen? Nope! There just hasn’t been any time to sort through all of my photos. So you’ll probably see all of that way later. And as the holidays get closer, my schedule feels completely overwhelming, both from work and from this blog. But I’m not really complaining. I actually love the craziness of it. I sometimes think I work best when I feel a little stressed out.

And the strange thing is, sometimes I feel as though I’m more creative and more inspired when I have less time on my hands.

That makes absolutely no sense, right? But it’s still true.

So…. Let’s talk about flatbread pizza for a sec. I’m on a flatbread hype, right now. They’re super easy to make since flatbread crust requires no yeast whatsoever, which means less of a wait time.

I made a late summer version, this Fig Caprese Flatbread, just a couple weeks ago. Now, I’m ready for a fall version filled with sweet maple butternut squash, crispy savory bacon, and fresh greens. Hope you are too!

It’s autumn! Not that you didn’t already know that. But I think it has to be my favorite season. As much as I love summer for the gorgeous weather and spring for all the flowers, nothing can outdo autumn in my eyes. All those pretty fall foliage. The trees turning into vibrant shades of reds, oranges, and yellows; the leaves decorating the ground with their brilliance, the crunch of the leaves under your booted feet, *sigh* I love it. I can stare at the trees all day. Well, if I lived anywhere other than in the City, where there are absolutely no seasons whatsoever.

But, oh my gosh. Autumn also means it’s the season for squash. All sorts of squashes. But, my ultimate favorite has to be butternut squash. I love the creaminess and the natural sweetness of these butternut squashes. And, minus the cutting, they’re easy to prepare. Over the past (almost) two years, I’ve featured butternut squash in multiple recipes, and I’m about to do it again.

I know it sounds strange, but I’ve been thinking of butternut squash potstickers since Thanksgiving. And of course, most of us probably associate butternut squash with fall. But why should we limit such a great ingredient to only a few months at the end of the year when it’s still available now?

You would think I would have worked on these potstickers as soon as I was inspired, but nope, it really did take me this long to finally get around to making it.

See, around Thanksgiving, I was watching an episode of the Chew. Have you seen it? I’m totally hooked on that show since their recipes are easy to follow with relatively common ingredients, exactly what I’m always looking for. In this particular episode that I watched, they visited a potsticker restaurant called Mimi Cheng’s Dumplings. I have never been there, but that doesn’t mean I can’t be inspired! The co-host of the show talked with the owners about making Thanksgiving potstickers. These potstickers are stuffed with turkey, stuffing, and cranberry sauce. Which led me to think of uncommon ingredients in potstickers.

So I thought, why not roasted butternut squash potstickers?

Sometimes it’s just a happy accident that certain ingredients end up together and work so well. This dish is one of those happy accidents.

I had leftover butternut squash from attempting a new recipe, some Brussels sprouts, and a brand new package of bacon. Individually, I liked each ingredient so I thought it might work together as one dish. Keyword: might. Because I wasn’t sure that all the different flavors would complement each other. I’m soo glad I tried it.

I love the sweet and savory components of this dish. Butternut squash is naturally creamy and sweet, but have you had it with maple syrup? It’s seriously amazing with added flavor. Add in some Brussels sprouts for a slightly bitter taste and crisp texture. Mix in crispy bacon and you have your savory component.
