I don’t know what it is about brunch that I am so in love with. Maybe it’s because most of the time, brunch is reserved for weekends. It’s when you can sit down with family and friends and enjoy a meal leisurely. Maybe it’s because brunch is often served with mimosas and Bloody Mary’s.

Whatever it is, brunch has almost always been my favorite meal of the day. One that I don’t get to enjoy often enough. And maybe that’s why I love it as much as I do.

It’s brunch day, my favorite day of the week! Mostly because it’s the one day I know I don’t have to work. And well, I get to indulge in my favorite brunch dishes. If I could have brunch everyday, I totally would. Unfortunately, that’s not the case.

I don’t know what it is about brunch that I love so much. Maybe it’s because it feels like a luxury. You get to sleep in and then get to eat your favorite breakfast/lunch foods at an hour that’s not too early and not too late. lol. In other words, my lazy day.

Have you been watching the Olympics? I’ve been so obsessed with it! I’m not really into sports most of the time, but when it comes to the Olympics, I’m pretty much tuning in every chance I get. Especially when it comes to figure skating since I love watching the ice dance. But it’s just fun watching a little of everything and just seeing how all these countries come together to compete. Plus, I got super excited because blogger Tieghan Gerald from Half Baked Harvest whose recipes I love has a younger brother who competed in the Olympics and won the first gold for the US.

Can you tell? I seriously love quiche. Not everyone does, and I get it, but I don’t think I would mind at all if I had to eat it every single day. There’s something about the creaminess of the eggs and cheese loaded with favorite ingredients like broccoli and mushrooms that is just sooo addictive.

Some days, I’m in the mood for quiche. It’s one of those meals that you can easily freeze and reheat later. And that’s a huge deal for me because some nights when I come home from work, I really don’t want to cook. Being able to freeze slices of this quiche and reheat it for dinner later on in the week makes me love this dish all the more.

This quiche is filled with ingredients you can easily find in your kitchen. Cloves of garlic, leftover ham, cheddar cheese (or any cheese for that matter), milk, eggs, and salt. Simple ingredients that result in an amazing taste. What more can you ask for?

I didn’t use a crust for this version of quiche, so it’s gluten free and low in carbs, but if you would like to add a crust, you can go ahead and pre-bake the crust before adding all the ingredients.

With melted cheddar cheese and smokiness from the ham, this quiche is savory and creamy and absolutely addictive. One of my favorites.

What I love about quiche is that it’s one of those dishes that you don’t really need a recipe for. As long as you have the basic ingredients: eggs, cheese, milk, and salt, you can change up the other ingredients to create a quiche perfect for you. Quiche is one of those simple dishes that cost a ridiculous amount for a small slice when you order in a restaurant. I feel like the portion is never enough. But even though quiche seems and sounds fancy, it’s super easy to make and you can always customize the ingredients to your taste. I love that you can use fresh seasonal ingredients.

For this particular recipe, I finally got around to trying to remake a slice of quiche I had at Filoli almost a year ago. It’s not exactly the same, but I loved the combination of artichoke and sun-dried tomatoes, so I had to fill my quiche with them.

I love the fluffiness and creaminess, and each bite of the artichoke and the sun-dried tomato gives a little tartness to the quiche.

I’ve wanted to make quiche for the longest time but never got around to doing so until now. Since it’s my first time making it, I thought that it was best to start with the basics: spinach and artichoke.

I love that combination, don’t you? Spinach and artichoke complement each other so well, and the flavors aren’t too overwhelming.  I chose not to do a crust this time because my younger sister doesn’t like crusts (not on her quiche, her pies, or her pizzas!). But that’s also a good thing! One, it means that we don’t have to do those extra steps of making a crust. Two, you can splurge on more of the filling. Three, it’s gluten-free!
