Ten years ago (what!), when I started college right after high school, I lived on my own for the first time. During my first year, I lived in the dorms so I had to buy vouchers for the dining hall, but I always kept ramen noodles in my room. Just in case of emergencies. You never know when you need a midnight snack. Or study food. I eat. A lot. Despite what my family and friends believe.

During my second year, I lived off campus in a townhouse with housemates. I cooked some of my meals, but to be honest, most of the time, I reheated food that my parents packed for me every week. Or I’d make my own salads and sandwiches. And on occasion, I looked up easy recipes to make either from the stacks of recipe cards I collected from Walmart which I alphabetized (I know, I’m such a nerd. lol) or browsed through recipes online or in magazines.

Now, looking back, I wish I had recipes like these to turn to. Something simple that doesn’t take up too much of my time. My recipes, for the most part, are meant for busy people or beginners in the kitchen. Whether you’re a college student cramming last minute for that exam or a busy parent trying to get dinner on the table after work, these recipes are meant for you.

So today, I’m sharing with you a ramen recipe that’s easy to make and filled with a ton of vegetables. As you can see, I used the instant ramen noodles rather than the authentic Japanese ramen because I know we’re more likely to have the instant ones on hand. Just discard the seasoning packets =)

Omg. I haven’t been able to go to the Ferry Building Farmer’s Market in a couple months since I’m either working Saturdays or doing something with my family. So when I finally had the time to go this past weekend with my sister, I might have overindulged. Just a little. Okay, maybe more than a little. The selection isn’t as amazing as it is during the summer. Nothing beats peaches and strawberries for me. But there’s definitely a huge variety of citrus. So of course, I had to buy several to use in my recipes.

Meyer lemons, blood oranges ♥!, sweet limes. I really couldn’t resist. Especially since I got to taste everything before I bought them.

Have you ever had a Meyer lemon before? The skin of a Meyer lemon is thinner, the flesh is yellower, and although they’re sour, they’re less acidic than the regular lemons you find at the supermarket. So I thought these lemons would be perfect for this loaf cake. And to top it off, since I love blood oranges, I wanted to add a blood orange glaze to the top of the lemon loaf. Unfortunately, there’s not enough blood orange juice to create that reddish orange color in the glaze. But I promise you, it’ll taste amazing.

One of my favorite cuisines is Thai. When you’re obsessed with food, it’s really hard to narrow down your favorite cuisine because there are just so many! How can you pick between that spicy Thai green curry and that Japanese teriyaki chicken? Or that Vietnamese garlic noodle and that chicken Madeira? You really really can’t.

I do really love my Thai food though. It might be that my dad is a chef at a Thai restaurant in San Anselmo and that I grew up eating a ton of Thai dishes. But it could also be that I love the taste of all the spices and flavors in their dishes. So many Thai dishes have a combination of lemongrass, lime kefir leaves, coconut milk, and chili peppers. It’s so refreshingly different.

This upcoming week is a super busy one. Have you noticed that the Superbowl, Chinese New Year, and Valentine’s Day pretty much fall in the same week? Which one are you most excited for?

My family celebrates Chinese New Year. It is a huge deal in our house. The cleaning, the cooking, the sweets, the flowers, the red envelopes. We do it allllll. The more, the better. I think the idea is overabundance. You want to have a lot of everything so you don’t lack anything in the upcoming year. At least, that’s how I was taught. But every family has their own traditions.

My own family traditions involve food. Lots and lots of food. We pile on the fruits, the candies, the dried fruits, the vegetarian dishes, the meats. Like, everything. And we eat for days. Because I think in Asia, Chinese New Year means days of celebrations. I will show you pictures of the food we eat sometime next week. =)

Okay, so I totally know this looks like it belongs in December. With all the greens and reds, it looks like Christmas all over again, doesn’t it?

If this bark sounds familiar, you might remember that I messed it up a few times and featured it in my 2015 Recipe Fails. Yes, it was that oily green goop that looked like it was a Play Doh wanna be. But after a few tries, I finally got it to work. How it was so disastrous to begin with is beyond me considering that I’ve made bark a few times before.

If you love chocolate bark as much as I do, I think you’ll love this version. The matcha powder which is slightly bitter helps offset the sweetness of white chocolate. Topped with fresh pomegranate seeds, this pomegranate green tea white chocolate bark is sweet and slightly tart.

And it doesn’t even take that long to make.
