One of my absolute favorites is chicken noodle soup. It’s something so delicious, so comforting, and yet so easy to make. But I wanted to add a little twist to an all-time classic. Instead of using pasta or egg noodles, I decided to use spiralized zucchini.

Haven’t I said I’ve been obsessed with breakfast lately? No? Well, I am. No surprise, right?

This is the weekend to stay in. At least, if you live in the SF Bay Area.

It’s been pouring, like earth drenching rain, which I’m not complaining about because we need the rain in Cali, but that doesn’t mean I like being caught in a downpour early in the morning and being forced to wear soaked-to-my-knees scrubs the whole day. Unfortunately, it seems to be a usual thing for me lately.

So since it’s Sunday, and my day off, all I really want to do is sit around in a pair of dry comfy PJs, sipping hot chocolate, or maybe coffee for you, and enjoying my breakfast.

Back in December, when I was in New Orleans, I bought myself a set of fancy measuring spoons. There were so many to choose from! I wanted a set of each one.

But then… What the heck would I do with several sets of measuring spoons?

Then, I found a set of measuring spoons for “a dash, a pinch, and a smidgen.” And I knew I had to get myself a set. That’s when you know you’re a food blogger. You’re obsessed with these little things.

I’ve been on a breakfast hype lately. So today, I want to share with you yet another super easy recipe for French toast.

Usually, French toast is one of those dishes that you have to sit down at the table to eat with a fork and knife.

But my life is way too busy and chaotic for that. At least, most weekdays. Weekends are a completely different story. =)

Since I’m always on the go in the morning, like most people, I want something super easy to take along with me. So I made these French toast cups.

These Baked Blueberry Coconut French toast cups are custardy with sweet bursting blueberries and just a hint of coconut. It’s simple to make and can easily be stored in the fridge for a few days. Then, whenever you want one for breakfast, you can quickly warm them up. And if you’re feeling like an even more authentic breakfast, you can always pour on the maple syrup. Because breakfast = maple syrup in my world.

Lately, I’ve been obsessed with my spiralizer, and chipotle peppers. So of course, I had to combine my two latest obsessions into one dish!

Zucchini Noodles in Spicy Chipotle Tomato Sauce with Asparagus and Mushrooms | Cooking with a Wallflower

I’ve tried zucchini noodles in so many different ways, and I love them all, but my favorite so far is when they’re smothered in tomato sauce. Yes, smothered. Because when I eat any pasta, or noodles, or anything with sauce, I like them served with a ton of sauce. This is no different. And since this dish is all vegetables, I don’t feel guilty for keeping it all to myself. =)

This spicy chipotle tomato sauce is spicy and slightly smoky and reminds me of a warm bowl of hearty chili. So if you love eating chili, you’ll totally love this version of tomato sauce. It’s super easy to put together, and you can have your meal ready from prep to table in just 20 minutes.

It’s time for breakfast!

I rarely have time to sit down for breakfast in the morning. It’s kind of hard to when I have to leave the house to catch the bus at 6:30 or 6:55 in the morning depending on where I work. I really don’t want to wake up any earlier than I already do to make breakfast. So often, I would grab something I can eat on the go. Like granola bars or fruits or yogurt.

Then there are days when I want something more, something warm. Especially on a cold morning.

My solution? This breakfast bowl.

Tacos! I don’t think we’ve talked about tacos in awhile. Which means we have to remedy that ASAP.

So about a month ago, I posted a recipe for honey chipotle chicken. The chicken is tender, the flavor smoky and slightly spicy. And it is my favorite chicken recipe so far. I mean, how can it not be since it works with so many other dishes.

Like this honey chipotle chicken avocado toast. Or with your favorite pasta or salad. If you prepare this chicken ahead of time, you’ll be set for a couple meals. It’s super easy to make, but it does take about two hours for the chicken to marinade. That way the chicken can absorb all that amazing flavor.

Plus, guess what? This chicken made it onto Buzzfeed!

Last summer, my sisters, cousins, and I went to Napa Valley to do some sightseeing, wine tasting, and lots of farm to table eating. You can read more about our trip here.

Have you ever been? If you haven’t, you should place Napa Valley on your “places to visit” list. It’s so pretty and relaxing there. It’s the perfect getaway.

I’m not much of a wine drinker, or any alcohol, really. I don’t usually finish a glass of wine or the cocktails that I order. But I do love tasting them. I’ll order a mimosa during brunch and take a few sips. Or enjoy taking tiny sips of wine during a girls’ day out. I love trying to taste the hidden floral notes, or the hint of seasonal fruits. And then most of the time, totally failing at it. lol.

If you’re a fan of cocktails with just a hint of alcohol, you’ll love this lemonade.
