I can’t believe another week has gone by! I’m still trying to get used to writing 2018! But I’m so excited because in less than two weeks, we’re headed to Las Vegas for my cousin’s bachelorette party. An entire weekend full of food, spa, and clubbing. I might be more excited about the food. We have reservations for Gordon Ramsay Steak. Although if we had known that Hell’s Kitchen is now open, we would have attempted to make reservations there instead. Is anyone else as obsessed with all things Gordon Ramsay as we are? lol

It’s been a difficult week in the kitchen. Our kitchen sink suddenly has almost no flow whatsoever. So in order to cook or wash dishes, we have to fetch water from the bathroom. Doing dishes took three times as long.

And cooking? Cooking wasn’t a problem. It was all the dishes that piled up that was. So after making a batch of cranberry orange bread, which I will share soon, I gave up doing anything in the kitchen until the sink is fixed.

So my sister and I opted for hot pot to chase away the cold. How are you guys staying warm this winter?

It’s been cold and rainy these last few days, but for some reason, it’s the perfect weather for ice cream and iced tea. I know it sounds so ridiculous, but hear me out. Maybe it’s a local thing since our cold weather is nothing compared to what you guys are experiencing out in the East Coast, but we sometimes like ice cream and cold drinks in cold weather because it means it takes longer to melt. You can enjoy your treats at a slower pace.

I actually created this cranberry hibiscus iced tea a little while ago back in December for the holidays. But I never had the chance to post it in December because there were just so many things I wanted to share first. So I’m sharing it with you now. Better late than never, right? =)

I don’t know about you, but when it comes to meals, sometimes I feel like I eat the same thing all the time. It’s not that I don’t want to try something new, but when you’re working all day most days of the week, it’s hard to be creative on a daily basis. So that means that there are some weeks where all my weeknight meals are pretty similar, especially the weeks following holidays. It’s so difficult to get back into routine after all the festivities. Of course, it’s completely different during the weekends.

Weekends mean I have a little extra time to play with new recipes, new flavors, new dishes. And I can get a little fancy with the plating. But shouldn’t we be able to have meals like that on a weeknight too? So I thought we could do spring rolls today.

I sleep with the heater on and under layers of blankets. I leave for work with a puffy jacket, a blanket scarf, and gloves because I can’t handle the cold.
