I’m actually heading to Lake Tahoe with my friends tonight for a weekend getaway. I don’t venture to snowy areas that often so I’m super excited. And I had no idea what to pack! Which really means that I probably over packed. We’re supposed to go snowboarding, but I’ve done it only once before, three years ago. I know I’m going to fall a lot!

Even though I’m going to be away, I’m writing this recipe beforehand so I can publish it over the weekend anyway.

These mini sweet peppers are so delicious; it’s hard to resist after just one.  Stuffed to the brim with corn and cheese, each bite is so satisfying. These peppers taste just a little bit like pizza. Or at least, that’s what my sisters told me when they tried it. With just 5 ingredients, this recipe is so easy to make and definitely worth the wait. It can easily be doubled and tripled too for more guests.

Have I mentioned that I love shrimp? No? Well, if I didn’t, you now know that I do. Honey Walnut Shrimp is my absolute favorite shrimp dish! We always order it when we eat out at a Chinese restaurant, which honestly isn’t that often. My family firmly believes that if you know how to cook, there’s no need to eat out. So we rarely go out to eat except for special occasions or extremely lazy days. But while this is my favorite dish, it can be pretty pricy. After all, it is seafood.
