I think I just discovered my favorite summer meal.

I love pasta in all forms because it’s so versatile. There are so many ways to customize pasta to your liking. Starting with the sauce, you can have tomato sauce, pesto, olive oil, afredo, just to name a few. But during hot summer days, I want something light and refreshing. Zucchini noodles are perfect for that.

I know not everyone likes zucchini, but it’s so filling and healthy. Tossed with tomato sauce, there’s so much flavor you won’t even notice that it’s not pasta.

This dish is gluten free, vegan, and healthy. How can you go wrong?

In Memory of Selma

Many of you may already know, but recently, Selma from Selma’s Table passed away after losing her battle with cancer. She was a big part of the food blogging community, especially in the Fiesta Friday community. Selma was such a positive and friendly person, always finding the time to reach out to fellow bloggers and make them feel welcomed into the community.

It’s hard to believe that someone like Selma whom I’ve talked to so many times over the course of the last year or so is no longer with us. I feel like it was just yesterday that we were commenting on each other’s latest food posts. It’s a reminder to all of us to live life to its fullest and to appreciate the life that we have.

As an avid tea lover, I have a huge collection of tea sitting in the pantry. I seriously cannot resist buying a new tea flavor when I see it at the supermarket. It’s really ridiculous sometimes how much I accumulate over time. Does anyone else have this problem? Or am I the only one?

I do love the classic teas. Green, black, oolong, earl grey, mint, I have them all. But I love floral variations too. Jasmine, rose, chrysanthemum, chamomile, just to name a few.

When I created this ice cream, I wanted something completely unique. I wanted to be able to embody the flavors of summer. Think iced teas with juicy sweet yellow peaches, and you’ll get this ice cream.

Vietnamese Corn and Coconut Pudding

So I was craving something sweet the other day. And since I just bought a ton of corn, I decided I wanted to use it to make dessert.

Are you familiar with Vietnamese desserts? It’s not as popular as some other Asian desserts, I feel.

But, oftentimes, you can find a limited selection at the end of the menu in a Vietnamese restaurant. Or if you’re lucky, you might even find a Vietnamese dessert shop. In the SF Bay Area, you should definitely give Bambu a visit. They give you a decent selection to pick from and you can add or take away toppings with no extra charge. In other words, you can customize it to your taste. What could be better?

Vietnamese desserts are called che. It’s a word that describes sweet drinks, puddings, and dessert soups. Yes, I know, that sounds weird. But it’s soo good. And unfortunately, photos don’t do this dessert justice, but I hope that you will give it a try anyway if you haven’t had it before.

Vietnamese Corn and Coconut Pudding is called Che Bap. It usually consists of fresh corn, mini tapioca, coconut milk, and sugar. Seriously easy to make and so delicious. This dessert is different and perfect for summer with all the fresh corn available at the market right now.

Each bite consists of sweet corn, the creaminess of coconut milk, and the pudding texture from the tapioca.

Just a few days ago, my friend Emily and I went to Dartealing Lounge for afternoon tea. It’s a cute little tea place just outside of the financial district. The area is a little sketchy, and we would have totally missed it if we didn’t know what we were looking for. The menu seemed endless. There were several choices for tea sandwiches, and what seemed like dozens of options for teas. Each afternoon tea service comes with pastries such as macarons, shortbread cookies, and scones.

As fun as the experience was, it does get rather expensive. So I thought I could recreate some of what we tried. That way we can invite friends over and have our own little afternoon tea party.

A few posts ago, we had lavender shortbread cookies.

Today, I wanted to introduce to you lavender scones.

They’re great for breakfast with a little honey or jam. And perfect for an afternoon snack with your favorite tea.

I hope you had a wonderful 4th of July weekend! What did you do to celebrate?

We ended up not planning a BBQ since so many of us were absent. It was very low key for my family.

Anyways… All I could think about all weekend though was a grilled cheese sandwich. I know. I’m weird.

I’ve been craving a grilled cheese sandwich lately. It’s one of those comfort foods that you’ll want every once in awhile, the one that brings back all of those childhood memories. But I don’t want just any grilled cheese sandwich. I want a gourmet grilled cheese sandwich. In other words, a grown up version.

So of course, that means we’re going to have to take the classic grilled cheese sandwich to the next level by spicing it up.

In this particular grilled cheese sandwich, I added sautéed mushrooms and onions seasoned with a little bit of salt and crushed red peppers. I used pepperjack cheese to give this sandwich an extra spicy kick. Savory and spicy, this grilled cheese sandwich is so delicious. Each bite is filled with warm melted cheese, sautéed mushrooms, and slightly crunchy onions.
