Thanksgiving was so nice and relaxing. It was all about the food, and of course, the days off. To be honest, I seriously overindulged in brownies, pumpkin pie, and apple pear pie. Like, dessert for breakfast kind of indulgence.

And with days of eating, we still have leftovers tightly packed into our fridge. I even froze some turkey so that it would last longer.

It’s not like we even bought a giant turkey. It’s one of the smaller ones, about 8 pounds, but we still have a ton of leftovers. That and mashed potatoes.

But I don’t mind because I love Thanksgiving leftovers. It’s when you can get creative with your food.

Today, though, we’re talking about overnight chia pudding.

If you’re like me, you probably try to buy things when they’re on sale. And sometimes, that comes in bulk. Or maybe an oversize can, like pumpkin puree. Most of the time, unless you’re making pumpkin pie, you’re not going to use a lot of pumpkin puree to make what you’re making. Which means that when you have a giant can of pumpkin puree, you’re going to have a ton of leftovers.

Since it’s right after Thanksgiving, I wanted something on the light side. At least for this week until it’s officially December and then it’s all about the freshly baked cookies and warm hot chocolates.

Wallflower Weekly Finds, 93

I’ve been away for a couple days doing all things Thanksgiving, and today, I’m almost officially back.

I’m still completely, utterly exhausted from all the foods we’ve eaten. Especially all the desserts I couldn’t resist.

If you’ve been on Instagram stories, you’ve probably seen all the things my family has eaten.

Salads, mashed potato, mac and cheese, asparagus and crab soup, chow mein, apple pear pie (super <3 the braided version!), pumpkin pie, brownies, cornbread, turkey, shrimp chips, garlic bread.

Just a few more days until Thanksgiving! I’m soo not prepared for it. You would think I’ve learned to start early from all those previous years, but nope. I apparently haven’t learned a thing because I’m still in the planning stage.

I have a general idea of what will end up on the final menu, but since I’m not going grocery shopping until Wednesday morning, I’m sort of still deciding what dishes will make an appearance on our Thanksgiving table.

The only thing I’m positive I’ll be making is this apple pear pie. My perfectly imperfect pie.

The countdown to Thanksgiving has begun!

Normally, I would share my weekly finds during the weekend, but with Thanksgiving just around the corner, I had to make a little room for a couple more recipes that would help inspire you. You know, in case you need a little inspiration.

My Thanksgiving dinner tends to be a mix of all of our favorite foods. Some of our usual includes classic Thanksgiving dishes like mashed potatoes, pumpkin pie, garlic bread, mac and cheese, the turkey, chicken pot pie, cornbread. But we also add some of our favorite Asian dishes, like Asian chicken salad, hot and sour soup, or chow mien. But whatever it is that we make, it will definitely last for at least the week.

Somehow, the leftovers are sometimes even better than the actual Thanksgiving dinner. Maybe it’s because there’s so many ways you can change it up. Or maybe it’s because you’ve tried everything and now you can just dig into your favorite dish. The day after Thanksgiving means I can have mashed potatoes and mac and cheese for breakfast. The best!

Cornbread is a staple for Thanksgiving dinner. At least, for us it is. But not just any cornbread. Cornbread that’s filled with corn kernels, diced jalapenos, and shredded cheddar cheese. It’s both sweet and savory. Plus, the top and edges have a slight crunch.

I’m pretty sure I can eat these all year round and not get tired of it. So delicious and so flavorful.

Growing up, chicken pot pie was a staple for my family. Not the made from scratch kind, but the frozen kind.
