We survived the first full week of the new year, and somehow it’s already almost the middle of the month. Some days, time goes by a little too fast. It’s kind of scary.
But since we survived the first week, yay us!, that means we should celebrate! It’s definitely another perfect day for brunch. At home. Because it’s supposed to be raining this weekend. And let’s be honest. I don’t do well in the rain. lol. Cold and wet is definitely not one of my favorites.
And I can’t think of a better option for staying in than this peanut butter and jelly croissant french toast.

Did you guys catch the Royal Wedding yesterday? I woke up early to watch the arrival of the family and to get the first looking of the wedding dress. To be honest, I was a little disappointed that the wedding dress was so simple, but Meghan Markle looked amazing regardless. And did you get a chance to watch Bishop Michael Curry’s sermon? I thought it was really powerful and inspiring. And of course, the Kingdom Choir sounded so good. Don’t you just love weddings?
I just wished I didn’t have work, especially after getting up at 3:45 in the morning to watch the wedding. So I’m completely exhausted and would love to sleep in on my Sunday off. Except that’s not really what I have planned. I bought tickets a few weeks ago for both me and my sister for SF Matcha Fest. Can’t wait to share photos of the food we try! Obviously. =)
In the mean time, let’s talk about this matcha green tea croissant french toast bake.

I am soo not used to Daylight Savings yet. I love the idea of waking up and going to work with the sun already up, but I don’t love leaving the office at six and finding it completely dark outside. It’s the only downside of fall in my eyes. Everything else <3 Does anyone else feel the same way?

Slightly sweet and custardy, French toast is a classic that can come in so many different flavors. Do you have a favorite?
In this version of baked French toast, I used leftover croissants. These croissants are torn into bite size pieces and soaked in an orange-almond milk-egg mixture then baked in the oven until the top is crunchy and the center is custardy. This croissant French toast with the slightest hint of orange is then dusted with powdered sugar and topped with a handful of sweet blackberries and fresh mint. To finish off this croissant French toast, an orange maple sauce is poured on top to give the dish a more citrusy taste before serving.

I’ve been on a breakfast hype lately. So today, I want to share with you yet another super easy recipe for French toast.
Usually, French toast is one of those dishes that you have to sit down at the table to eat with a fork and knife.
But my life is way too busy and chaotic for that. At least, most weekdays. Weekends are a completely different story. =)
Since I’m always on the go in the morning, like most people, I want something super easy to take along with me. So I made these French toast cups.
These Baked Blueberry Coconut French toast cups are custardy with sweet bursting blueberries and just a hint of coconut. It’s simple to make and can easily be stored in the fridge for a few days. Then, whenever you want one for breakfast, you can quickly warm them up. And if you’re feeling like an even more authentic breakfast, you can always pour on the maple syrup. Because breakfast = maple syrup in my world.
