Cooking with a Wallflower

Recommendations Wallflower Weekly Faves

Wallflower Weekly Finds, 103

Before I went on vacation, I had to plan out a few extra posts and schedule them.

Here’s a little peek at how I organize some of my posts and recipes. Can you tell that I’m obsessed with colors and post-its? It’s the only way I know how to stay organized and on top of things. Otherwise, I get so confused and forgetful.

How do you stay organized?

Life of a Wallflower, 30 – Southern California

I just finished my last day of work this week, and now it’s officially vacation mode! Yay!

So while I’m off on this current vacation, I’m finally sharing my last vacation trip from way back in September. We went to Southern California for my sister’s birthday. I know, soo belated, but there were so many other things to share that this got pushed back until now.

Be warned. This post will be very heavy in photos. =)

Happy Monday!

I hope you had a fantastic weekend. Mine was relatively uneventful, which is how I like it these days, especially since I’ve been working more days lately. If it’s possible not to have anything planned, I’d rather have it that way.

The rain has finally let up! And we’re getting a few days of sunshine. And while it looks like spring here in the city, it definitely feels like winter. If I could, I would stay in bed all day long. I’m lazy like that in the winter. I can’t help it! It’s so much warmer than being outside. And I’m even less inspired to leave the house on a Monday morning.

Corn and Potato Chowder | Cooking with a Wallflower

Since it’s a Monday, and Mondays aren’t my favorite day of the week, I thought I could brighten up your Monday, and mine, by sharing this corn and potato chowder.

I’ve been obsessed with soups, stews, and chowders. Maybe it’s because they’re all warm and comforting, and I just want that in my life to chase away the brisk cold. This corn and potato chowder is exactly what I need.

You guys! Less than a week left until I go on vacation!

I was just soo excited to escape the rain, but when I checked the weather today for Ensenada, it looks like the rain will be following me there!

Noooo! Now, I have to rethink about the packing.

I wanted to bring summery clothes and swim suits. But I guess now I have to consider the rain.

Valentine’s Day means that I’m about to go on vacation! And I’m soo excited! Not just because I get to travel to a new locale and eat good food (hopefully), but because I can escape the rain for a little while. I feel there’s been an endless amount of rain in the Bay Area for weeks now. I need a little sunshine in my life. A cruise and a trip to Ensenada sounds perfect.

In the meantime, we’re going to indulge in these cranberry pistachio chocolate bark.

We have to talk about these cookie bars!

But first, did you see the Super Bowl? Technically, I didn’t. My dad and my cousin were watching so it was in the background for me while I worked on other things.

But what I was waiting for was Lady Gaga’s halftime performance! Did you see it?! While I know Lady Gaga has been controversial over the years, I love that she doesn’t care what other people think. And her songs are super catchy.

The commercials are always fun to watch too.

Okay, cookies. Let’s face it.

Cookies don’t come out perfect all the time. Sometimes they fall apart, sometimes they’re flat, sometimes they’re hard. I have issues all the time. Me + cookies? Sadness. Even when it’s the most foolproof recipe, somehow I manage to mess it up.

Happy Sunday!

What are your plans for this Sunday? Will you be watching the Super Bowl today?

I’ll be honest. I’m not really into football, but my family is. So I’ll probably end up glancing at the screen from time to time and watching the half time show and commercials.

But! Any excuse to snack sounds good to me!

Spicy Chipotle Chicken Burritos | Cooking with a Wallflower

I don’t know if I’ve mentioned this before, but I’m a fan of Chipotle. It was kind of a staple for me and my housemates back in college. Chipotle’s huge burritos were a favorite for us. That was, until I discovered their burrito bowls. Then I became obsessed with those because I could eat without having to dirty my hands and I could do multiple things at once. Plus, I could eat those burritos and burrito bowls in two meals. Soo worth it.

Spicy Chipotle Chicken Burritos | Cooking with a Wallflower

These Spicy Chipotle Chicken Burritos are inspired by those burritos. They are huge and stuffed with so many of my favorite ingredients. If you’re a Super Bowl snacker, then you may already have some of these ingredients. Like, you know, chips and dips. If you have guacamole and salsa left over, save them for these burritos. It’ll make you happy. Promise.

Wallflower Weekly Finds, 101

Last weekend was Lunar New Year. We spent the day visiting family and friends and temples. And of course, we did a lot of eating.

There were so many firecrackers being lit throughout the weekend, especially in the San Jose area.

And the ground was like a sea of red and pink confetti!

And aren’t these candies so cute?!

Happy Wednesday!

I cannot believe it’s already February!

It’s going to be another busy month! But February means there’s just two weeks left until I leave for my first cruise trip! I’ve been wanting to pack for awhile now, but I have no idea what to bring since I don’t know what the weather is like in Ensenada or on the cruise ship. I have a feeling I’m going to over pack.

Three Cheese Truffle Mac and Cheese | Cooking with a Wallflower

Anyway, we’re already halfway through the week!

To get us through the rest of the week, I thought we could resort to some comfort food. Like this three cheese truffle mac and cheese.

Some days, I just want a heaping bowl of cheesy pasta. It’s simple, delicious, and the perfect indulgence.

Creamy with the smoky flavor of fontina, cheddar, and parmesan, then seasoned with black truffle mac and cheese, this pasta is the ultimate comfort food.

Happy Monday!

We spent the weekend celebrating the Lunar New Year with family. For us, Lunar New Year is filled with traditions. Visiting families and friends, eating lots and lots of foods, and of course, the superstitions. But it was definitely fun, and I’m so glad that I have an extra day off this weekend to recover from my food coma!

Aren’t these sweets so cute? We used them for Lunar New Year decorations, but I think they’re better for Valentine’s Day.
