A Little Note

It has been hectic on my end!

With holiday gift shopping, gift making, decorating, recipe creating, and working, I’m so exhausted.

I know I’m behind in replying to comments on my blog, (about a week and a half worth!) but hopefully I’ll be caught up by the end of the week. I try to answer comments in the order that I receive them so I’ll get to yours, promise! But if there’s an urgent question, please feel free to send me an email, and I’ll get back to you faster.

So today, I wanted to share with you a recipe for shrimp spring rolls. This isn’t the first time I’ve made spring rolls on the blog. Several months ago, I shared a Roasted Asparagus Spring Rolls, which is vegan if you prefer that option. These are simple to make, involve very little cooking, and they’re healthy. Filled with shrimp and tons of vegetables, these spring rolls are delicious as appetizers or as a meal.

Holidays Recommendations

2014 Last Minute Gift Guide

I’ve been cooped up at home all day because it’s pouring outside.

Schools are closed, roads are blocked, cars abandoned and flooded, trees have fallen, roofs collapsed. Not the typical San Francisco Bay Area weather, I assure you. In all my life, I don’t think we’ve ever had schools closed due to severe weather. Snow days are normal in other parts of the country, but we don’t get that here, so imagine our surprise when we heard that schools will close and finals are postponed due to the wind and rain. We’re speechless and skeptical because the weatherman has been wrong many times before.

Except, apparently, this time.

I’m soo glad I didn’t have to venture outside today. Instead, I get to lounge around in PJs and sip on peppermint hot chocolate (upcoming recipe!).

Okay, I think it’s safe to say that I’m a huge fan of food trucks and street food. I know for some people there’s no appeal in standing while you eat, or sitting on upside down buckets at makeshift tables. But I absolutely love it. It’s an experience you can’t get anywhere else.

Shrimp Korean Tacos | Cooking with a WallflowerA few posts ago, I mentioned that I love buffets because you get to eat a little of everything, even if you don’t have an appetite big enough to devour all that food to make it worth your money. Well, the same concept applies to food trucks. I love that I can visit each truck and order something completely different. If I want Indian food, I can wander to that truck at the far end. If I want clam chowder, or pizza, I can walk over to the food truck next to the Vietnamese street food. If I want cupcakes, I can wait in line over here. So many options =)

If you haven’t had a chance to try Korean food from a food truck, you might think this is a weird combination. Korean food stuffed in tortillas? What the heck? But it is seriously amaaazing with different flavors and texture. I know, I’m harping again about the texture. But don’t you love it when every bite that you take is different?

I know many of you have wanted to learn how to monetize your blog, and I’ve been putting this post off for awhile now because I feel that there are more important aspects of blogging.

If you’re looking to make quick money off of blogging, you’ll be disappointed. I’m not saying that to be discouraging. You really won’t see success overnight.

What it takes is time, quality content, and a little investment before you actually start making money off of your blog. And when you do, it’s not a lot. At least, not when you first start. In general, the larger your audience, the more money you’ll make. This means that you have to really enjoy blogging and be prepared to dedicate your time to growing your blog before you can really see extra money coming in.

Sometimes it’s just a happy accident that certain ingredients end up together and work so well. This dish is one of those happy accidents.

I had leftover butternut squash from attempting a new recipe, some Brussels sprouts, and a brand new package of bacon. Individually, I liked each ingredient so I thought it might work together as one dish. Keyword: might. Because I wasn’t sure that all the different flavors would complement each other. I’m soo glad I tried it.

I love the sweet and savory components of this dish. Butternut squash is naturally creamy and sweet, but have you had it with maple syrup? It’s seriously amazing with added flavor. Add in some Brussels sprouts for a slightly bitter taste and crisp texture. Mix in crispy bacon and you have your savory component.
