It’s been such a nice weekend with clear skies and warm weather. I’ve been trying to savor it as much as I can because living where I live, the clear skies don’t often stay for too long. And I’m excited because tonight, my sisters and I are attending the annual CUESA Summer Bash. Over 40 restaurants, bars, and wineries will be present to serve food and drinks using farmer’s market produce. It was amazing last year, and we definitely wanted to attend the event tonight.
But in the mean time, can we talk about this Korean style kimchi soba noodles?

I can’t believe another week has gone by! I’m still trying to get used to writing 2018! But I’m so excited because in less than two weeks, we’re headed to Las Vegas for my cousin’s bachelorette party. An entire weekend full of food, spa, and clubbing. I might be more excited about the food. We have reservations for Gordon Ramsay Steak. Although if we had known that Hell’s Kitchen is now open, we would have attempted to make reservations there instead. Is anyone else as obsessed with all things Gordon Ramsay as we are? lol
In the mean time, let’s talk about this chicken broccoli soba noodle with peanut sauce.

It’s Monday, my least favorite day of the week. There’s something about this day that always seems so stressful. Maybe it’s because we just came from a relaxing weekend? But that doesn’t quite work either because when I have Mondays off, Tuesdays don’t seem as daunting. And you would think that if I had a long weekend, Tuesdays would be difficult, right? But it doesn’t seem that way so I think it’s just Monday itself that I don’t like? Is that weird?
But that’s okay because I get to share this amazing recipe with you today. This dish is vegan and can be gluten free too if you use gluten free soba noodles.
I love soba noodles. I always have them on hand for those days when I’m too lazy to cook. It’s like pasta. You always have to have them on hand for those late night dinners where you don’t want to do anything fancy.

Soba noodle cooked with three types of mushrooms in miso soybean soup. This three mushrooms soba noodle miso soup is quick to make and deliciously perfect for the cold winter weather.
It is soo cold these days. I seriously dread getting up in the morning for work, especially when it’s at 5:45 in the morning. What happens when you start at 8 in the morning and you have to take public transportation.
But as much as I’m complaining about the cold, I know it’s so much worse in the Northeast with that snowstorm!
Which is why we all need some nice warm soup. Especially if you’re like me, and slowly, very slowly, recovering from a persistent cold.
Today, I wanted to introduce to you my Three Mushrooms Soba Noodle Miso Soup. This soup contains soba noodle cooked with three types of mushrooms: oyster mushrooms, white mushrooms, and shiitake mushrooms. But you can always use your favorite types or replace the mushrooms with vegetables and meat instead. The recipe can be very easily adjusted to your taste.
