Happy October!
Now that it’s October, it finally feels like fall. We’ve had our first rain in almost half a year. And I am so ready to layer my clothes, wear knee high boots, and wrap myself in cozy plaid blanket scarves. I’m just not so sure I’m ready for shorter days and longer nights.
Of course, as it’s getting cooler with each passing day, I want something warm and comforting to indulge in, especially on gloomy, rainy days. Honestly, what could be cozier and more comforting than a bowl of hearty chili?
Made with tomatoes, onions, garlic, black beans, and smoky chipotle peppers and served with zucchini noodles, this chili is sooo perfect for fall meals.

Happy Sunday!
I know it’s spring, but it has yet to feel like it. I’m told that while I was away in Pennsylvania, it was super warm in the SF Bay Area. Now, it’s back to cooler weather and rain. And while I was on vacation in Pennsylvania all of last week, it was mostly in the 30’s! I even saw snow fall a few times. But now that I’m back at home, Philadelphia is in the 50’s and 60’s! Seriously? Lol
All of last week, I was wishing for warm comforting foods while I huddled in front of the heater. Okay, sort of. I had too much to explore and too much to eat in a week to be sitting at home wrapped in a blanket. But I did wish I had something warm and comforting like this bowl of chili to chase away the cold.

Smoky chipotle chili filled with leftover turkey and vegetables. This spicy leftover turkey vegetable chili is delicious and the perfect dish for after Thanksgiving.
Omg! There’s just two more days until Thanksgiving, and I feel like there’s still so much to do. I went grocery shopping over the weekend to try to avoid the crowds and ridiculously long lines, but it was unavoidable. Plus, some of the ingredients I’m looking for are already out of stock. So even though I tried to get ahead with my shopping list, I have no choice but to go back out there and pick up a few more items.
We’re thinking this year we want the usual mac and cheese, mashed potatoes, garlic bread, pumpkin pie, brownies. But this year, we’re also adding my honey pear pie, my green bean casserole, and my roasted brussels sprouts. What will you be serving at your Thanksgiving table this year?

With summer coming to an end, and fall just around the corner, I feel like life has been so hectic lately. I’ve been going to bachelorette parties, bridal showers, birthday parties, weddings, and baby showers practically every weekend.
It’s so much harder to find time to cook your meals when your schedule is super tight. So I like dishes that are simple to make with very little to prep. A big bonus if they’re healthy, too. Lately, I’ve been obsessed with poke bowls. Partly because they’re easy to make, partly because they’re customizable, and partly because it’s the perfect healthy meal for those days when you have no time to cook.

Chili filled with diced red bell peppers, corn, diced parsnips, diced carrots, and black beans then served with warm buttered toast. This spicy root vegetable chili is chunky, spicy, and soo comforting especially on a cold day.
It’s been so cold and rainy lately. Not just in San Francisco, but all over the Bay Area. Rivers and creeks have overflowed. Roads and homes flooded. Trees and power lines fell. It’s so crazy to think that just a little over a year ago, we were in the middle of a drought.
I really don’t like being out in the torrential rain when I don’t have to be. Especially now that I’m sick. Seriously, sore throats and dry coughs are the worst! I just want to stay in bed all day wrapped in blankets and eating chicken noodle soup. Any soup really.
But enough of that. We have to talk about this spicy root vegetable chili.
Winter is all about the root vegetables. When I browsed the farmer’s market a couple weeks ago, there were beets, turnips, radishes, and parsnips everywhere. So of course, I had to buy some. And well, turn them into chili.
