Happy Monday!

I hope you’re feeling all rested after we lost an hour yesterday. I always try to get up the same time I normally do, that way I don’t actually lose an hour and it feels about the same as any other day. But somehow the day seems to move too fast anyway.

It’s finally warm and sunny here in the Bay Area, and it feels like it’s spring! I’ve been looking forward to spring-like weather for what feels like weeks now. After all the rain and gloominess that we’ve been experiencing lately, I’m just ready for a little bit of sunshine in my life.

I’ve been so uninspired to cook lately so I’ve been trying to take walks at the farmer’s market for inspiration. But when I do get around to cook, I want to make something that I can eat over several meals, like this savory root vegetable pot pie. Filled with potatoes, parsnips, carrots, celery, and broccoli, this pie is filling and delicious and perfect for any meal.

Recommendations Wallflower Weekly Faves

Wallflower Weekly Finds, 105

The last week has been so difficult.

I worked most of the week to keep myself busy, but I felt as if I was distracted and elsewhere, not completely focused on what I was doing.

On my day off, I decided to stop at a local coffee shop for some inspiration. I feel like I needed to constantly do things in order to not feel so sad, to not wonder the what ifs. But at the same time, it feels like the whole world continues to move as if nothing has happened and yet my entire world has changed.

Avocado Toast

I went to a small coffee shop called Rise and Grind, and they had the most amazing avocado toast. The avocado spread was garlicky and topped with a soft boiled egg with crushed red pepper flakes. I mean, seriously, I can eat this for days. And trust me, I have plans to make this at home and sharing them with you. The creme brulee latte was amazing, especially if you’re a coffee lover. That crispy sugary top was my favorite part.

I honestly didn’t know whether I wanted to write and publish this post. I have never posted anything so personal, so publicly. Especially on this blog where almost everything is positive and light. But I don’t know how to cope with grief and loss, and I can’t express my feelings and thoughts verbally without bursting into tears and struggling to swallow past that lump in my throat. I was always much better at writing.

Wallflower Weekly Finds, 104

The last week has been so eventful. There’s been a lot of traveling, and I haven’t quite had enough time to recover and get myself back on track yet. So we’re doing my weekly finds and recommendations earlier than usual this week.

But seriously, I am on vacation withdrawal. A few days on a cruise where there’s nothing to do but eat and have fun. Then one day of work before I went to Oakland for a little daycation. How am I supposed to go back to everyday life? I wish I could turn back time and start my vacation days all over again. And maybe redo a few things. Lol

These photos were taken from my quick trip to Oakland. Isn’t the view of the downtown area so gorgeous? It was just a short trip to keep my sister company while she takes her exam, but I don’t go over to Oakland often so it’s always fun to explore.

I’ve been back for a day from vacation, and I’m soo ready for another one. Doesn’t it always feel like vacation is so short no matter how long you go for? I’m not ready for reality to set in, and I definitely don’t look forward to waking up early in the morning for work.

My first trip on a cruise started out well, but due to the weather, we weren’t able to explore Ensenada as much as we wanted. And the second night on the ship was a little terrible because of the gusty winds that rocked the ship. I’m so glad that I slept through most of it. Overall, it was so much fun. I just wish the trip was a couple days longer…

You can find some pictures of our Ensenada trip on Instagram, but I’ll share more photos soon on the blog. I just need a little time to sort through all the photos. I also need a little time to catch up on everything else.

We need to talk about this quiche! I feel like I’ve been waiting forever to share this one with you. So grab your favorite fork, sit down, and hopefully you can enjoy a slice of quiche with me!

Can you tell? I seriously love quiche. Not everyone does, and I get it, but I don’t think I would mind at all if I had to eat it every single day. There’s something about the creaminess of the eggs and cheese loaded with favorite ingredients like broccoli and mushrooms that is just sooo addictive.

Sometimes when I’m feeling a little lazy, I want a dish that is easy to put together. This quiche is simple with ingredients that you probably already have on hand. Plus, if you have leftover quiche, you can always make it into another meal. I always have extra to bring to work or even reheat for dinner the next night. Or you can always freeze the quiche for another time. Or make one to share at a dinner party. So many options!
