Every September and October, San Francisco experiences a heat wave. Where we have consecutive days of warm weather and lots of sun. Where we see the absence of our usual thick fog and overcast skies. And during this short period of time, San Francisco natives and locals have no idea how to stay cool. Mostly because there is no air conditioning. We never really need it so no one really has it.

So of course, when it gets even slightly hot, it’s uncomfortable and stuffy if you’re indoors.

We’re actually in the middle of one of those heat waves right now. It’s so unusual to wake up in the morning and already feel as though it’s summer. It’s unusual for us to not need to wear a jacket when we leave the house. And so, with the last of the summer heat, this is also the perfect time to share with you this watermelon granita.

Three simple ingredients: watermelon cut into small pieces and frozen, coconut water, and a sweetener of your choice. I personally liked sweetening the watermelon granita with elderflower syrup. But you can use honey, agave, maple syrup, or simple syrup if you like.

This watermelon granita takes just minutes to make. It’s super refreshing, perfect for warm summer days.

Once the watermelon is frozen, add the frozen watermelon, coconut water, and elderflower syrup  into a food processor and pulse for about a minute or two until the watermelon becomes shaved ice consistency.

If the watermelon granita is too melted, place it into the freezer for 20 – 30 minutes until it becomes the consistency you like.

Serve the watermelon granita cold.

Ingredients
  • 2 cups frozen frozen cubed watermelon
  • ½ cup coconut water
  • 2 tablespoons elderflower syrup, more to taste
Directions:
  1. Once the watermelon is frozen, add the frozen watermelon, coconut water, and elderflower syrup into a food processor and pulse for about a minute or two until the watermelon becomes shaved ice consistency.
  2. If the watermelon granita is too melted, place it into the freezer for 20 - 30 minutes until it becomes the consistency you like.
  3. Serve the watermelon granita cold.
