Whenever we go on vacation, or even on a day trip, we’re usually looking for the best places to eat.
Sometimes, it’s the popular brunch spot all the locals rave about, sometimes it’s the farm to table restaurant with the freshest ingredients. Other times, it’s that dessert spot with the most amazing mouthwatering macaron ice cream sandwiches. Somehow, our vacations always revolve around the food we want to try. Not too surprising, right?
It’s so much fun eating at these local restaurants. Not only do I get to try delicious food that locals are so excited about, but I also love savoring each bite and turning it into a game of “What’s in this dish?” I like trying to figure out the ingredients in some of my favorite meals and then attempting to make my own version at home.
Because as much as I love some of the dishes that I eat, it’s way too far to make a trip back just to satisfy a craving.
So why not get inspiration and create my own at home?
This peach mint salad was inspired by the Stone Fruit Salad from the Naked Pig during our trip to Sonoma Valley a month ago. I love just how simple and summery this salad was. So after tasting it the first time, I knew that I was going to make my own version when I got home.
Using simple ingredients that can easily be found, this salad takes only minutes to put together. But it’s soo flavorful, so refreshing, healthy, and guilt free. It’s perfect as a light snack and even as a little afternoon snack. You’ll want to make these while peaches are still fresh and sweet.
Toss freshly sliced peaches, chopped mint leaves, crumbled mozzarella, a squeeze of lemon juice, and a drizzle of honey together.
Serve the peach mint salad cold.

- 2 large yellow peaches, sliced

Thank you for the inspiration and motivation. I tried it tonight for dinner around 6pm before a meeting. I used feta instead of mozzarella and lemon. Super easy and delicious. Only downside, I was hungry again by 9pm.
