It’s been days since we were at the Backstreet Boys concert, and I still can’t get over the giddiness of watching them live. They were sooo gooood. I would most definitely go see them again. lol.

Now that I’ve gotten that out of the way, let’s talk about this caprese pasta salad.

I’ve been craving pasta for awhile now. Maybe it’s because I’ve been seeing photos of it everywhere. But pasta is definitely a staple for me. There’s something about it that is just so comforting. And I’m surprised that it took me this long to make another pasta dish. So of course it’s time for a summer version to satisfy my cravings.

This pasta is as simple and as delicious as it sounds. Perfect for warm summer days, it’s great for a quick meal or for bringing on for a picnic.

Sweet tomatoes, fresh basil, and creamy burrata tossed with penne pasta then drizzled with balsamic glaze. Seriously so easy and so good.

In a small pot, add 1/2 cup of balsamic vinegar and heat over low heat. Let the balsamic vinegar simmer for about 15 minutes until thickened. Set aside for now to allow for the balsamic glaze to cool.

Cook the pasta in boiling water until al dente, about 8-10 minutes. Drain the pasta and run the pasta through cold water to prevent the pasta from continuing to cook and from sticking to each other.

In a small bowl, mix together olive oil, balsamic vinegar, Italian seasoning, minced garlic, flaky sea salt, and freshly ground better until combined.

Pour the dressing over the pasta and toss until well coated.

Add sliced tomatoes, basil leaves, and roughly torn burrata. Drizzle the balsamic glaze over the caprese pasta salad.

Season the caprese pasta salad with salt and pepper to taste.

Serve the caprese pasta salad cold.

Ingredients
Balsamic Glaze
  • ½ cup balsamic vinegar
Balsamic Vinaigrette
  • ¼ cup olive oil
  • 1½ tablespoon balsamic vinegar
  • ½ teaspoon Italian seasoning
  • 1 clove of garlic, minced
Pasta Salad
  • ½ pound penne pasta
  • 2 small tomatoes
  • 2 sprigs of basil
  • 1 ball of burrata or mozzarella
Directions:

    We got “Caprese salad” at Legoland, CA. It was slightly similar, but obviously did not have as elegant a presentation as yours does. It’s a great meal to serve for a gathering of friends or family.
