Caprese Pasta Salad

Pasta tossed in a balsamic dressing with sweet tomatoes, fresh basil, and creamy burrata. This caprese pasta salad is simple, delicious, and the perfect meal for summer.
Ingredients
Balsamic Glaze
  • ½ cup balsamic vinegar
Balsamic Vinaigrette
  • ¼ cup olive oil
  • 1½ tablespoon balsamic vinegar
  • ½ teaspoon Italian seasoning
  • 1 clove of garlic, minced
Pasta Salad
  • ½ pound penne pasta
  • 2 small tomatoes
  • 2 sprigs of basil
  • 1 ball of burrata or mozzarella
Directions:
  1. In a small pot, add ½ cup of balsamic vinegar and heat over low heat. Let the balsamic vinegar simmer for about 15 minutes until thickened. Set aside for now to allow for the balsamic glaze to cool.
  2. Cook the pasta in boiling water until al dente, about 8-10 minutes. Drain the pasta and run the pasta through cold water to prevent the pasta from continuing to cook and from sticking to each other.
  3. In a small bowl, mix together olive oil, balsamic vinegar, Italian seasoning, minced garlic, flaky sea salt, and freshly ground better until combined.
  4. Pour the dressing over the pasta and toss until well coated.
  5. Add sliced tomatoes, basil leaves, and roughly torn burrata. Drizzle the balsamic glaze over the caprese pasta salad.
  6. Season the caprese pasta salad with salt and pepper to taste.
  7. Serve the caprese pasta salad cold.
