I hope you’ve had a great week. I feel like this week has been unusually long. Maybe it’s because I came home from Seattle last weekend and went straight to work the next day. And since it’s another six day work week, it feels extra long. But to offset my vacation withdrawal, I’m already planning my next one at the end of August. This time we’re headed to San Diego.

In the mean time, let’s talk about another summer treat.

Every year, I have a new summer obsession. Last year, it was basically everything blueberry. From oatmeal to ice cream, I wanted to make blueberry everything. This year seems to be the year of otter pops, or freezer pops. However you like to call them.

I previously made lychee rosé otter pops for an adult version of our childhood summer treat. But this time, these freezer pops are kids friendly and seriously perfect for hot summer days. We had our heat wave a little early this year in San Francisco, but I also know that our city’s summer starts in September and runs through October. So I want to be prepared. And also for everyone else’s sake, we need cold treats to keep us cool during hot days.

These freezer pops take little room in the freezer so they’re perfect for storing until you need them. Which to be honest is pretty much any time.

Brew hibiscus tea in hot water for several minutes. Let it cool before whisking with fresh tangerine juice. Pour the tangerine hibiscus tea into otter pop sleeves.

Freeze the otter pops until completely frozen.

Serve the tangerine hibiscus freezer pops cold.

Serves: 6-8 freezer pops
Ingredients
  • 2 cups tangerine juice
  • 2 bags of hibiscus tea
  • 1½ cups hot water
  • 1-2 tablespoons honey (optional)
Directions:
  1. Brew hibiscus tea in hot water for several minutes. Let it cool before whisking with fresh tangerine juice. Add honey if desired extra sweetness. Pour the tangerine hibiscus tea into otter pop sleeves.
  2. Freeze the otter pops until completely frozen.
  3. Serve the tangerine hibiscus freezer pops cold.

    While in San Diego….if you have time, check out Old Town, and Chicano Park. Chicano park has a large amount of Chicano art painted on concrete posts holding up the bridge to Coronado. Balboa park is another favorite. Most Sundays there is a celebration going to for one country or another in the International Cottage area. The architecture, various gardens, great museums are a must see.Pacific/Mission beach is the beach area.

    I have a set of reusable pop-sickle molds that Tupperware made. I make freezer pops out of fruit juice for my grandchildren. These are nice because there is no waste. I’ll have to try hibiscus tea in them.
