The best part about summer is that I have an abundance of peaches and nectarines waiting to be eaten. I buy so many at the farmer’s market over the weekends. I feel they taste so much better than the ones from the supermarket. But sometimes I buy too many, and I can’t finish them in time, especially since I like my stone fruits firm rather than soft and ripe. Once it becomes ripe, it’s perfect for smoothies and recipes.
Do you like your peaches and nectarines firm or soft? And while I’m asking anyway, do you prefer peaches or nectarines? Yellow or white?
I love both.
But let’s talk about this peaches and cream steel cut oatmeal.
I love the flavor of peaches. It always reminds me of candy. You know those peach rings? They’re kind of addictive. And this peaches and cream steel cut oatmeal reminds me of them. This is creamy with a chewy texture. Every bite is filled with peaches and notes of maple and vanilla.
It’s hearty and filling, the perfect way to start your summer mornings. It’s enough to serve 2-3, but I like to store leftovers in small mason jars so that I can bring them to work with me. Oftentimes, the oatmeal starts to absorb all the liquid and becomes super thick. I just add more almond milk and stir until the consistency is to my liking.
In a small or medium sized pot, add steel cut oats and water over medium heat. Cook the oats for about 5 minutes, stirring occasionally to prevent the oatmeal from sticking to the bottom. Stir in vanilla extract, diced and peeled peaches, maple syrup, ground cinnamon, and almond milk. Cook for an additional 35 minutes or so until the oatmeal consistency is to your liking. Allow the oatmeal to cool for about 10 minutes before serving.
Serve the peaches and cream warm with a drizzle of maple syrup and almond milk. Top with fresh slices of peaches and fresh or frozen berries.

- 2 tablespoons maple syrup
- 4 tablespoons almond milk
- 2 teaspoon vanilla extract
- ⅛ teaspoon ground cinnamon

- Fresh berries
- Slices of fresh peaches
- Drizzle of almond milk
- Drizzle of maple syrup
