Ingredients
Peaches and Cream Steel Cut Oatmeal
4 cups water
1 cup steel cut oatmeal
1 large peach, peeled and diced (about 2 cups)
2 tablespoons maple syrup
4 tablespoons almond milk
2 teaspoon vanilla extract
⅛ teaspoon ground cinnamon
For Serving
Frozen berries
Fresh berries
Slices of fresh peaches
Drizzle of almond milk
Drizzle of maple syrup
Directions:
In a small or medium sized pot, add steel cut oats and water over medium heat. Cook the oats for about 5 minutes, stirring occasionally to prevent the oatmeal from sticking to the bottom. Stir in vanilla extract, diced peaches, maple syrup, ground cinnamon, and almond milk. Cook and continue to stir occasionally for an additional 35 minutes or so until the oatmeal consistency is to your liking. Allow the oatmeal to cool for about 10 minutes before serving.
Serve the peaches and cream warm with a drizzle of maple syrup and almond milk. Top with fresh slices of peaches.
