One of my favorite brunch dishes (I apparently have many) is French toast. There’s something about the simplicity of this dish dusted with powdered sugar that’s just so appealing.
Slightly sweet and custardy, French toast is a classic that can come in so many different flavors. Do you have a favorite?
In this version of baked French toast, I used leftover croissants. These croissants are torn into bite size pieces and soaked in an orange-almond milk-egg mixture then baked in the oven until the top is crunchy and the center is custardy. This croissant French toast with the slightest hint of orange is then dusted with powdered sugar and topped with a handful of sweet blackberries and fresh mint. To finish off this croissant French toast, an orange maple sauce is poured on top to give the dish a more citrusy taste before serving.
Every time we shop at Costco, we end up with a lot more food than we can finish. They sell everything in bulk, which means if I’m cravings pastries or other baked goods, I’m going to have to buy at least a dozen. It’s kinda ridiculous. Sometimes I’ll buy a dozen muffins, and eat them for days. I swear, these jumbo muffins sometimes last forever, but they’re great if you want to feed a group of people. Other times, I’d get a dozen croissants, or a dozen turnovers. And halfway through any of those dozens, I’m soo over it.
This last weekend, I bought croissants. Since I had so many leftover, I thought I could repurpose the croissants to create an incredible yet simple breakfast just in time for Mother’s Day.
So ta da!
Citrus Croissant French Toast! You’ll want to serve this dish this weekend!
Preheat the oven to 350F. Lightly grease a 9 inch pie dish with nonstick cooking spray or olive oil.
While the oven is preheating, tear up the croissants into bite size pieces and place them into the pie dish.
In a medium sized bowl, mix together almond milk, orange juice, and eggs until well incorporated.
Pour the egg mixture over the bite size croissant pieces. Make sure that all the pieces are dipped in the egg mixture.
Place the pie dish in the oven and bake for about 15 minutes until the top has browned and the center is custardy.
Allow the croissant French toast to cool for a minutes.
Place handful of blackberries on top with mint leaves as garnish. Sprinkle powdered sugar on top.
In a small bowl, mix together orange juice and maple syrup.
When ready to serve the citrus croissant French toast, pour the orange maple sauce on top.
Serve this citrus croissant French toast warm.

Andrea, citrus is not something which would usually grasp my attention but you have made it look so appealing.
