Tender pea sprouts stir fried with minced garlic and served with rice. This garlic pea sprouts stir fry is amazingly delicious, simple, and flavorful.
Have you heard yet? I think the Internet exploded when Chipotle revealed its guacamole recipe yesterday. So in case, you’re a huge Chipotle guacamole fan, here’s the link to their actual recipe, just in time for Cinco de Mayo.
In the meantime, I’ll talk about something non guacamole related. At least, for now =)
One of all favorite vegetables is pea sprouts. Actually, if you haven’t already noticed yet, I have many favorite vegetables. While I’m not a vegetarian, I do prefer my meals filled with tons of veggies. I admit it. I’m addicted to them. I mean, there are so many types, all of which taste different in both flavor and texture.
Have you had pea sprouts before? You can usually find these pea sprouts in a stir fry at Chinese restaurants. But they’re so easy to make, you can cook them yourself at home.
You can find these pea sprouts at the Asian market. Usually they’re placed in a produce bag and filled to the rim. They look like grass. Nothing too special, but they taste soo good.
When these pea sprouts are cooked with garlic, the flavor of the garlic takes center stage. So if you’re a fan of garlic, this is definitely the dish for you.
Pea sprouts look like this.
You’ll want to use a lot of it. Think of spinach. You can have so much raw spinach, but once they’re cooked, they shrink until there’s barely anything left. The same goes for pea sprouts. So don’t get scared when you see the amount you’ve bought.
This dish uses only four ingredients. Um hm. That easy. Pea sprouts, garlic, olive oil, and salt.
And you can adjust the ingredients according to your tastes. If you absolutely love garlic, you can always add more garlic cloves. If you feel you need more salt, go ahead and add more. And you don’t even have to use pea sprouts. You can do this with spinach too if you can’t find pea sprouts.
Heat the olive oil in a pan for about a minute. Once the olive has warmed, turn the heat to a lower setting, and carefully add the minced garlic. You want the olive oil to be hot enough to cook the garlic, but you don’t want them to become burnt either.
When the garlic has become aromatic, add the pea sprouts. The pea sprouts will start to shrink as they become cooked.
Season the dish with salt to taste.
Serve the garlic pea sprouts stir fry with rice.
- 1-2 tablespoons olive oil
- 6-7 garlic cloves, smashed or minced or both
- 4 cups pea sprouts
- ¼ teaspoon salt, more to taste
- ¼ teaspoon crushed red pepper (optional)
- Heat the olive oil in a medium sized pan for about a minute.
- Once the oil has heated, carefully add the smashed or minced garlic to the pan.
- Cook the garlic until it turns a golden brown and aromatic. Then add the pea sprouts.
- Use a spatula to stir the pea sprouts so that they will cook evenly. Once the pea sprouts have shrink in size and are tender, season with salt and crushed red pepper.
- Plate the garlic pea shoots on a plate.
- Serve this dish with rice.

I used to love pea sprouts on salads, but then I suddenly developed an allergy to them and lots of other vegetables… 🙁 I think it’s the pesticides, etc. But here in Scandinavia, local grown organic vegetables aren’t available year round or they’re way too expensive, so mass producted, pesticide-sprayed greens is what we’ve got… Anyway, I love your recipes and cooking ideas, very inspiring and your photos are amazingly beautiful! 🙂

You can always substitute with other vegetables. Spinach, water spinach, and red amaranth are great with garlic too =)

Oh, what great timing, we JUST saw pea sprouts at the H-Mart in our neighborhood! We have not only the Korean grocery nearby, but Japanese markets, Vietnamese, Filipino, and Chinese… so many different vegetables, so few meals in a lifetime is how I feel every time I walk into these markets.

Love your recipes, I only have modify some of them because of the salt. The use of lots of veggies is wonderful. I have never had pea sprouts, but will try them.
