Frozen acai puree blended with frozen banana and fresh strawberries to create a delicious smoothie bowl topped with star fruits, longans, and sliced strawberries. This strawberry banana acai bowl with star fruit is an easy meal to jumpstart your day.
It’s been forever since I’ve made an acai bowl either as breakfast or as a snack. Last summer, I was so addicted to smoothie bowls, especially acai bowls and pitaya bowls. I love the sweet taste of fruit blended into a smoothie like consistency then topped with more fruits and sometimes granola. It’s packed with nutrients, easy to make, and tastes so refreshing.
With summer just around the corner, and with the current California sunshine, this seems like the perfect way to start the day, or as an afternoon snack. I can picture myself kicking back, sitting under the sun, and enjoying one of these bowls any day. I know, I know, my acai bowl wasn’t quite photogenic. It melted faster than I could photograph, but I promise, it tastes so good.
The best thing about these bowls is that you can customize them however you want. You don’t have to follow my recipe exactly. If you like berries, add more. If you like coconut, you add shredded coconut on top. If you like granola, you can top your smoothie bowl with as much granola as you like.
For this recipe, I chose to top the acai bowl with star fruit, which tastes slightly sweet and tart with a crisp texture. I love this fruit because it’s so different compared to others. However, it’s not a fruit for those who have kidney issues. The fruit does contain Longan, if you haven’t had it before, is very similar to lychee, but it has a crisp texture that lychee doesn’t have. I also feel they’re sweeter.
This is the ultimate summer food. So what are you waiting for? Give it a try!
Place the acai packets, frozen banana, 3-4 large strawberries, and a little soymilk, or your favorite type of milk, into a blender. You’ll have to plan this ahead of time to have frozen bananas, but I like to keep frozen bananas on hand just in case I want a quick smoothie or banana ice cream. Blend until the smoothie reaches the consistency of your liking.
Pour the smoothie into a bowl. If the smoothie is too liquidy, you can always place them in the freezer for 10-15 minutes so that it’s more solid. Top the smoothie bowl with sliced star fruits, strawberries, and longan for an exotic taste.
Serve the acai bowl cold.
Enjoy!
