A parfait with alternating layers of acai blended with berries and avocado blended with frozen bananas to create a delicious and nutritious breakfast or snack. Topped with granola and fresh fruits, this parfait has so many flavors and texture.

I’m really loving all these parfaits, bowls, and smoothies. They’re so amazingly delicious, addictive, and nutritious. What more can I ask for?
This particular parfait is special. It’s filled with tons of antioxidants from the acai and vitamin C from all the berries and fruits. The creaminess and richness of the avocado keeps us full and satisfied. And if you’re like me, then you must be as addicted to granola as I am. I love the slight sweetness of granola and the additional crunch for texture. I can’t resist them! I keep adding more and more to my parfait.
What I like most about layering my parfait is that each bite tastes different. Your first spoonful will taste different from your next as you reach a separate layer. It makes eating so much more fun, doesn’t it?
Which obviously means I have to share with my friends at Fiesta Friday over at the Novice Gardener! How can I not?
I used Sambazon smoothie packs to create the acai part of the parfait, but if you don’t have that, you can use acai puree, frozen acai, or frozen blueberries. Blueberries are definitely easier to get access to. Blend whichever you’re using with raspberries and strawberries. No need to add extra sugar.
Next, blend the avocado with a frozen banana. This creates a thick creamy texture. The banana is sweet enough that you won’t need to add extra sugar either.
Pour the blended berries into your glass or bowl. Then add a layer of granola. As usual, if you’re vegan, or on a gluten free diet, make sure to check the labels of the granola before you buy it.
Next, pour the avocado layer and top with granola. Continue until you run out of ingredients.
Top the parfait with a little bit more granola and more fresh fruits.
That’s it! Now you have a healthy and delicious breakfast or an afternoon snack. Serve immediately cold.
