Julienned zucchini, sweet grape tomatoes, and shredded squash blossoms combined to create a delicious summer salad. Drizzled with your favorite dressing, this easy to make salad is both cool and refreshing, great for a hot summer day.
I am a total San Franciscan girl. I was born, raised, and currently living in the city by the bay. I’m used to the cool, overcast, and often foggy weather. So when I’m in a city where the temperature is over 90 degrees? I feel like I’m about to melt.
These last few days I’ve been pre-vacationing in the South Bay, where the weather is the complete opposite of San Francisco, hot and humid. I want icy cold drinks. I want something cold and refreshing to eat. Nothing warm or anything that requires much cooking because the stove makes the kitchen too hot.
My solution? A simple salad. Julienned zucchini combined with sweet grape tomatoes and shredded squash blossoms for a healthy and refreshing summer salad. Just a few ingredients, but so flavorful. Drizzle your favorite dressing over the salad, and you have dinner ready in about 10 minutes at most.
First, julienne a large zucchini using either a grater or with a knife. I recommend making a spiralizer. That way the zucchini isn’t cut too thin.
Slice the grape tomatoes into fourths. I used a variety of grape and cherry tomatoes to add more flavor to the salad.
Shred the squash blossoms by tearing them into smaller pieces.
Toss the salad until the ingredients are evenly combined.
Drizzle your favorite dressing over the salad.
Serve the salad cold. Enjoy!

Thank you, Chitra!
I love the colors and textures of the salad. My husband and I love salads and would like to make that.
Where does one get squash blossoms if she doesn’t grow her own squash?
I bought my squash blossoms from the Farmer’s Market. I haven’t seen it elsewhere though. Good luck finding them =)
Do you have a Vegetti?? Looks as if you do! I just got one and use it all the time. Works great for salads like this one….summer perfect.
I don’t have a Vegetti. I used a grater instead. But I really hope to get one soon, especially for salads =)
Such a gorgeous salad, I love the zucchini ribbons and using the blossoms also. The colors are so vibrant.

I adore courgette flowers (the actual vegetable I can take or leave) so your recipe reminds me that I must find a source of them here.
