Overnight vanilla chia pudding topped with frozen acai smoothie. This refreshing acai layered chia pudding is delicious and perfect for a warm day.
We’re in the middle of a heat wave.
San Francisco normally has it’s summer late compared to most places. Our summer starts in late September and ends in mid October. Most of the year, it’s cold and foggy with overcast skies. But in September and October? It’s super warm. And there’s not much we can do to keep ourselves cool since our homes aren’t equipped with air conditioning.
But since it’s still warm out and we need a way to cool off, I thought I would share with you this acai layered chia pudding.
This chia pudding does need a little bit of planning ahead. To make the chia pudding, you’ll have to let it sit overnight in the fridge so that chia seeds will thicken and create a pudding like consistency. I like to sweeten the chia pudding with either honey or maple syrup and add a little bit of vanilla extract for flavor. Then when you’re ready to eat, you can blend your favorite smoothie like acai, and then top the chia pudding with the smoothie. It’s soo good. And so refreshing.
In a medium sized jar, add chia seeds, vanilla almond milk, vanilla extract, and maple syrup. Use a spoon to stir until all the seeds have dispersed. Refrigerate the chia seed mixture overnight so that the chia seeds can thicken.
Once you’re ready to serve the chia pudding, divide the chia pudding into two small jars or glasses.
In a food processor or blender, add sliced frozen banana, frozen acai, and milk. Blend until thick and smooth.
Pour the acai smoothie over the chia pudding.
Serve the acai layered chia immediately cold with fresh or frozen fruits on top.
