It’s National Ice Cream Day, and I thought I would share with you an easy summer treat for all those sunny days.

Especially if you live in an area with high temperatures and no wind.

This blueberry soft serve is super easy with just two ingredients.

All you need for this quick dessert are frozen blueberries and condensed milk. If you have both on hand, then you’re all set. Or if you don’t have blueberries but you do have other berries, that works too. Or if you have a mix of berries, that also works. Anything goes.

I like to keep fruits in the freezer for multiple purposes. Sometimes I like to add them to smoothies. Other times I like to have frozen berries for garnish on my smooth bowls. Frozen berries when they start to come to room temperature will have that frosted look. Soo pretty. And in this case, frozen berries can make a delicious and refreshing soft serve. Especially when you have a craving for ice cream and don’t have any stocked up.

We’re also always stocked up in condensed milk since my family likes to drink Vietnamese coffee. And it’s amazing on toast if you’ve never had it that way before.

To make the blueberry soft serve:

Place frozen blueberries into the food processor. Process it for a minute. Then add condensed milk and puree until it becomes smooth and thick. It might take a few minutes, and you might need to use a spatula to scrape down the sides.

Pour the blueberry puree into a metal baking pan and place into the freezer for about 20-30 minutes until it becomes firm.

Serve the blueberry soft serve immediately cold.
