What have you spent the weekend doing? I finally got around to making bread! It’s been on my to do list for the longest time, but I honestly just have zero patience for working with yeast. So most of the time, I just don’t bake with them. But since now I have all the time in the world, I thought I’d tackled bread making. I have to admit that it’s sooo satisfying seeing it come out of the oven looking like bread. =)

So today, I wanted to introduce you to a brand new pantry cooking recipe. Some days, especially now, we can’t go out shopping for groceries as often. Which means that there are going to be days when we have to cook with what we have in the pantry or in the fridge.

It just happens that we’re pretty fully stocked. Slices of bread, a little gochujang leftover in the fridge, butter, furikake seasoning, black sesame, slices of cheese, a little bit of honey, and of course, kimchi. The great thing about kimchi is that it lasts forever. Weeks ago, my cousin’s husband’s mom made kimchi and gave us a big batch of it. Since we had kimchi, I thought we could add it to our grilled cheese sandwich. Just for a little Korean fusion flair. And I swear, it is amazing.

The strong flavor of kimchi with melted cheese oozing from every bite. A little bit of gochujang for a sweet and spicy kick. Furikake rice seasoning for a hint of sweet and savory, and then a drizzle of honey to finish it off. Ever since I discovered how amazing grilled cheese sandwiches are with a touch of honey, I’ve been adding it to allll my grilled cheese sandwiches. You know how you have honey drizzled over brie? It’s kind of the same concept.

In a small bowl, place butter and microwave for about 10-15 seconds until it has softened. Remove the bowl from the microwave, and mix in black sesame. Set aside for now.

Place sliced cheese or shredded cheese in an even layer on a slice of bread. I only had pepperjack sliced cheese in the fridge so that’s what I ended up using. Add chopped kimchi on top of the sliced cheese in an even layer. Spread a thin layer of gochujang on the second slice of bread. Put the second slice over the first slice.

Spread the black sesame butter over both sides of the sandwich.

Place the sandwich in a nonstick skillet over low to medium heat. Add extra butter if needed. Cook each side for about 3-4 minutes until golden brown.

Serve the kimchi grilled cheese sandwich lightly seasoned with furikake rice seasoning and a drizzle of honey.

Ingredients
  • 1 tablespoon salted butter
  • 1 teaspoon black sesame
  • 4 slices of bread
  • 4-6 slices of favorite cheese
  • 2 teaspoons gochujang
  • 1 cup chopped kimchi
  • Furikake rice seasoning
  • honey
Directions:
