I’m taking a moment to check in with you.

I hope you all are doing well, that you’re well stocked for the next couple weeks. It’s super difficult to stay indoors when spring has finally arrived and the flowers are blooming and the skies are clear. But please do what you can and stay inside as much as you can. On the bright side, this is the perfect time to find a new hobby! Or to pursue that hobby that you never had time for before.

I live in the SF Bay Area, and we are currently mandated to shelter in place. Many stores are closed, bars and wineries are shutdown, restaurants are open only for takeout and delivery, and only essential businesses remain open. Some of us are already having cabin fever, and it’s just Day 1 of three weeks right now.

If you don’t already know, I’m a full dental hygienist. I don’t talk about it often mostly because I like to keep the hygienist side and the food blogger side separate. And since we are in the health care sector, our office remains open for emergency treatment. For those who are in a lot of pain and need treatment immediately. So while most of the Bay Area is supposed to stay inside to reduce the risk of spreading the coronavirus and to flatten the curve, I still head in to work every morning. And still sharing new recipes with you when I come home at night.

I thought we could use something a little light and festive while we’re all cooped up inside. Or when we’re no longer required to shelter in place. This pineapple hibiscus soda requires just a handful of ingredients. Pineapple juice for a little tropical flavor and sweetness. Hibiscus tea for just a hint of floral with a pop of color. Club soda for just a bit of bubble. Add crushed ice and garnish with flowers and mint leaves and you have yourself a pretty bubbly drink

Ingredients
  • 1½ cups pineapple juice
  • ½ cup hibiscus tea
  • ½ cup club soda
  • Crushed ice
  • Mint
Directions:
  1. Mix together pineapple juice and hibiscus tea. Top with club soda and crushed ice. Garnish with mint leaves and flowers.
  2. Serve this pineapple hibiscus soda cold.
