It’s been one of those weeks. The ones that feel super long and never ending. I know that we just had a long weekend to recuperate, but it really didn’t feel like I had a long weekend. Maybe it’s because I still had a five day work week. And lately, it’s been a little tougher than usual. Life drama, long work days, and blog deadlines all within a week. To add more to my week, for an hour I was devastated and my heart stopped because my word doc malfunctioned. This entire post disappeared, and all my word documents could not be opened. And there is no time in my schedule to rewrite everything. Luckily, everything had been backed up in a cloud drive I didn’t even know existed until I went searching for it.

I’m ready for vacay, you guys. Lol. Take me away!

All that personal drama aside, I’m super excited to share with you this brand new cocktail today. It feels like I’ve been waiting forever to share this with you.

I don’t know about you, but sometimes I dream of food. Okay, if I’m completely honest, I think about food all the time. Enough to dream about it. Lol. And for weeks now, all I can think about is blending frozen lychee with rosé wine to make a lychee rosé wine slushie.

You know how when you go wine tasting, and the description says you can taste notes of peach, or lychee, or strawberries, or hints of floral? Um…. I can’t taste any of that. Obviously, I’m no wine connoisseur. Far from it. But the idea of lychee with rosé wine stuck with me. And I finally got around to making it.

I normally don’t shoot my recipes outdoors, but I feel like the outdoors is the only way to do this wine cocktail justice.

Two ingredients: lychee and rosé wine. Well, three if you include the lychee syrup.

 

I actually used canned lychee just because it’s easier to find and you can’t always find sweet lychee when you buy them fresh. Plus, you’d have to sit there and peel all the lychee and remove the seeds. Not my idea of a fun Sunday afternoon. Especially if you need about a pound of the fruit.

Remove lychee from the can and place into a freezer safe container. You’ll have about a pound of lychee. Reserve about a half cup of the lychee syrup for added sweetness. If you don’t want the extra sweetness, you can skip this step.

Once the lychee is completely frozen, add to a blender or a food processor. Pour in half a bottle of rosé wine. Blend the two ingredients together until smooth.

If the wine slushie is too liquidy, place in the freezer for another 30 minutes before serving.

You can also make this wine slushie before hand and place in the freezer. Remove the lychee rosé wine slushie a half hour before serving to allow it to melt.

Serve the lychee rosé wine slushie cold.

Ingredients
  • 2 - 20 oz cans of lychee or 1 pound lychee
  • ½ bottle of rosé wine
  • ½ cup lychee syrup (optional)
Directions:
  1. Remove lychee from the can and place into a freezer safe container. You’ll have about a pound of lychee. Reserve about a half cup of the lychee syrup for added sweetness. If you don’t want the extra sweetness, skip this step.
