It’s almost the weekend!

Do you have any plans this Memorial Day weekend?

My family and I were thinking that maybe we’ll go to Muir Woods and do some hiking through the redwood forest. I’m crossing my fingers that our plans won’t fall through. We’ve been semi postponing this hike for awhile now, and I really want to go.

I think I’ve been bitten by the travel bug, and since I can’t travel all the time, I want to do little local trips even if it’s just right outside of the city. Just something to look forward to.

In the mean time, we have to talk about these beet chips! I’ve been so into beets lately, and these beet chips were the latest. Super easy to make with just a few ingredients that you already have on hand. The beet chips are sweet and crispy with a caramelized edge. It’s so delicious and perfect for snacking.

I absolutely love the flavor and the texture. Since beets are naturally sweet, they don’t need much seasoning to enhance their flavor.

You’ll definitely want to give these a try.

Preheat the oven to 400F.

Line a full size baking sheet with aluminum foil and lightly grease with olive oil or nonstick cooking spray. I made sure to line my baking sheet with aluminum foil because otherwise the beets would stain the baking sheet. It definitely stained by hands while I was handling them.

Use a mandolin to slice the beets as thin and evenly as possible. If you don’t have a mandolin, you can cut with a knife, but try to keep the slices as even as possible. Otherwise, the beets won’t become crispy at the same rate.

Pat the beets dry. Then place the sliced beets into a mixing bowl, preferably a metal one so that it doesn’t stain. Toss with olive oil until all the slices are coated in olive oil.

Transfer the beets onto the baking sheet. Sprinkle salt and pepper on top. Then bake the beets for about 30-40 minutes. Not all the beets will crisp at the same time. Especially if some slices are thicker, and there are hot spots in the oven. So check the beets at around 30 minutes, and remove the chips that are done then continue to bake the ones that aren’t quite ready yet.

Serve the baked sea salt and pepper beet chips immediately for best taste.

  • 1½ tablespoons olive oil
  • Sea salt
  • Black Pepper

    So now I know what I am going to do with the single beautiful looking large beet that I was given at our local farmers market by one of my favourite veggie sellers – she just added it to my bag and I thought at the time what am I going to do with one beetroot? These look delicious!
