Baked Sea Salt and Pepper Beet Chips

Thinly sliced beets tossed with olive oil, sea salt, and pepper then baked until crispy. These baked sea salt and pepper beet chips are perfect for snacking.
  • 3 medium sized beets, peeled and thinly sliced
  • 1½ tablespoons olive oil
  • Sea salt
  • Black Pepper
  1. Preheat the oven to 400F.
  2. Line a full size baking sheet with aluminum foil and lightly grease with olive oil or nonstick cooking spray.
  3. Use a mandolin to slice the beets as thin and evenly as possible.
  4. Pat the beets dry. Then place the sliced beets into a mixing bowl. Toss with olive oil until all the slices are coated in olive oil.
  5. Transfer the beets onto the baking sheet. Sprinkle salt and pepper on top. Then bake the beets for about 30-40 minutes. Not all the beets will crisp at the same time. Check the beets at around 30 minutes, and remove the chips that are done then continue to bake the ones that aren’t quite ready yet.
  6. Serve the baked sea salt and pepper beet chips immediately for best taste.
