How was your weekend? I hope you had an uneventful and restful couple of days off. We had a citywide blackout most of Friday so I ended up leaving after just a few hours and starting my weekend early. Even better? I wasn’t scheduled to work Saturday, which means it was an extra long weekend for me. Yay!
But sometimes I feel, even with the extra time, weekends pass by so quickly. While the rest of week seems to go by ever so slowly. Do you feel the same way?
Anyways, I’ve been craving acai and pitaya lately . It’s been sooo long since I’ve had either. So today, I thought I’d share with you an acai pitaya smoothie bowl, a combination of two of my favorite tropical smoothie bowls. Why do I have to choose one or the other when I can have both? Right?
I think what I love most about smoothie bowls in general is that they’re easy to make and they’re so healthy and refreshing. Plus, you can be as creative as you want with the toppings.
So here are a few tips:
To get the frosted look on the raspberries, or any berries, freeze the berries. Once you’re ready to serve the acai pitaya bowl, remove the berries from the freezer and place them on top. Once the berries start to thaw, you’ll get the frosted look.
For smoothies, I like to use frozen bananas and sometimes frozen berries. It gives the smoothie bowls a thicker consistency and a coldness without diluting the flavor with ice. I usually cut the bananas into smaller pieces and freeze them until I need them for smoothies.
There are two different types of pitaya, or dragon fruit: the ones with the red center and the ones with the white center. I used the one with the red center to create the pinkish color of the smoothie. You can find these at Asian supermarket, but I’ve seen them at Safeway too.
Now, you can get creative with your acai pitaya smoothie bowl. =)

- ½ cup acai juice
- 2 large frozen bananas
- ½ pitaya/dragon fruit
- 2 large strawberries, fresh or frozen
- frozen raspberries
- sliced blood oranges
- chia seeds
- sliced strawberries

- Top the acai pitaya smoothie bowl with frozen berries and fresh fruits.
