Water infused with cucumber, mint, and lemon to create a refreshing healthy beverage with no added sugar. This infused water is perfect for every day drinking.
I don’t like water.
I know how weird that sounds, but it’s true. I like iced water, infused water, teas. But just regular room temperature water? No thank you.
But water is soo healthy for you, and you’re supposed to drink about 8 glasses a day, which means I have to spruce up water so that I would like it.
The result? This simple cucumber mint lemon water.
Speaking of lemon juice….
A few days ago, right before Thanksgiving weekend, a representative from Williams-Sonoma contacted me through email to ask if I’d be interested in participating in a short questionnaire in regards to juicing.
Personally, I don’t own a fancy juicer. It’s out of my budget, but I do have both an electric citrus juicer and a manual citrus juicer.
I love the idea of juicing because it’s healthy and delicious and easy. Just because I don’t own one doesn’t mean I haven’t played with one before. =) You can customize your drink with your favorite fruits and vegetables, and it’s all natural. Since I don’t personally have a heavy duty juicer, I like going to Nektar Juice Bar for my fresh juice fix. Unless, of course, if I can “borrow” one from my cousin. The cost of buying fresh juice from stores does add up and it’s not as convenient as making your own juice whenever you want, right at home.
I love making fresh orange juice with the citrus juicer, but I also like to juice lemons and limes so that I always have lemon or lime juice on hand for a recipe. You don’t have to use the juice made from your juicer just as a drink. I store lemon or lime juice in an airtight container for a few days, and all I have to do is measure out how much I need without having to squeeze the lemons or limes in the middle of a recipe.
For instance, like with these recipes: Mexican Fruit Cocktail, Pho Thai, Soba Noodle Salad with Spicy Soy Lime Dressing, Vietnamese Chicken Salad, and Blackberry Mint Iced Tea Lemonade.
It’s just so much easier if I had lemon or lime juice ready for use.
But if I did have a juicer, I’d love to use it to make a superfruit juice.
Anyway…
Add cucumber slices, lemon juice, and mint leaves into a glass of water. Allow the water to sit in the fridge for about a half hour to an hour until it becomes cold. Add ice if you like. And serve cold.

- 6 slices of cucumber
- 1 cup water
- 2 tablespoons lemon juice
- 4 mint leaves
- Ice cubes
- Add the cucumbers, lemon juice, and mint leaves into the water.
- Refrigerate the water for about ½ - 1 hour until the water is cold.
- Add ice cubes for a cold drink.
- Serve the drink cold.

I’ve tried the mint with the cucumber. But I think the mint over powers the cucumber. Also tried with cucumber and lemon. And the lemon won. My husband likes just the lemon. But for me I like to add a bit of the cucumbers. I also tried putting orange slices in the water just by itself. Pretty good. Not as strong as lemons.

Cucumber has a more settle taste. You can try adding more cucumbers or let it sit longer with just the cucumber.
