We’ve been busy on our end, and it’s been difficult for me to balance life right now. We do have some exciting news to share, but it’s going to have to wait a little longer.
In the mean time, it’s been getting warmer in the city these past few days. I’m sure that it must be scorching hot for some of you if SF is experiencing heat. So of course, it’s the perfect time to share a brand new ice cream recipe with you.
We’re keeping it really simple today with these blueberry honey Greek yogurt popsicles. Honey Greek yogurt filled with swirls of homemade blueberry jam. And if you want to turn this into a breakfast bar, you can even add granola to it! The only thing is the granola really gets soft once it’s mixed with the yogurt. But it’s really up to you how you like your popsicle bar.
In a small pot, add fresh blueberries, granulated sugar, and a little bit of water. Cook the blueberries for about 10-15 minutes until the blueberries have burst open and break down. Remove the pot from heat and let the blueberries sit for several minutes to thicken and to cool down.
In a medium size bowl, add honey Greek yogurt. If you like, you can get the plain Greek yogurt and add honey to taste. That way you can control the sweetness level too. Add two to three tablespoons of blueberry jam and swirl it into the Greek yogurt. You can add more or less of the blueberry jam to your preference.
Pour the blueberry honey Greek yogurt mixture evenly into the popsicle molds. Insert the popsicle sticks. Freeze the popsicles for about 4-6 hours or overnight.
Run the popsicle molds under warm water before removing the popsicles from the mold.

1 teaspoon water
!Greek Yogurt
2 – 6oz honey Greek yogurt
2 tablespoons granola (optional)
