It’s been a hard week with the change in time. Waking up to darkness makes it so difficult to get out of bed in the morning. But on the bright side, at the end of the day, when I leave work, there is still sunlight out, annd there’s still enough time left to catch the sunset . And it’s definitely starting to feel as if winter is fading away and spring is starting to arrive. Especially when the blossoms are already appearing on the trees.

While it’s still winter though, I’m enjoying the last of it. One of my favorite parts of winter is all the citrus that’s available. Soo many different types of citrus. And so many ways to use them. In drinks, in baked goods, in salads, in vinaigrettes. The options are endless.

Today, I wanted to share with this winter citrus inspired drink. Simple ingredients with grapefruit juice as the star of the drink. Add a little bit of fresh mint leaves and smash it with a muddler so that all the fresh minty flavor comes out. Top with club soda to give it some fizziness. Add crushed ice to make the drink cold. Then garnish with lots of fresh mint leaves. This grapefruit mint soda is soooo good, and it’s so easy to make that it’s the perfect drink for Sunday brunch with family and friends.

In a tall glass, add grapefruit juice and mint leaves. Muddle the mint leaves until they begin to break. Top the glass with club soda and crushed ice. Garnish with fresh mint leaves.

Serve the grapefruit mint soda cold.

Ingredients
  • 1 cup grapefruit juice
  • 1 sprig mint leaves
  • 1 cup club soda
  • Crushed ice
  • Mint leaves for garnis
Directions:
  1. In a tall glass, add grapefruit juice and mint leaves. Muddle the mint leaves until they begin to break. Top the glass with club soda and crushed ice. Garnish with fresh mint leaves.
  2. Serve the grapefruit mint soda cold.
