Is it odd to say that I’ve been looking forward to this weekend because I had absolutely nothing planned? I spent Friday night staying in with a bowl of homemade garlic shrimp vermicelli noodles and a little bit of Netflix. I had a CPR recertification class Saturday morning. And then maybe a walk through Golden Gate Park today, but nothing too eventful. Just a low key weekend.

It’s been so busy the last few weeks, that a low key weekend filled with almost absolutely nothing is exactly what I needed.

In the mean time, let’s talk about these blueberry swirled overnight oats.

So I’ve been kind of obsessing over these overnight oats. They’re so simple to make and so delicious. There are so many different ways to dress them up. But my current favorite is this blueberry swirled overnight oats.

Blueberries are readily available during the summer months. They’re huge and so so sweet. Perfect for making blueberry jams. And then swirling them all into my oatmeals and my overnight oats and chia puddings. The blueberry jam never gets old for me. And I still obsess over them.

In a small bowl, mix together cornstarch and water until the cornstarch has dissolved. In a small pot, add blueberries, granulated sugar, and cornstarch mixture and cook over medium heat for about 5-8 minutes until the blueberries have softened and the juices thicken. Set the blueberries aside to cool for a few minutes.

In a medium sized bowl, add old fashioned rolled oats, chia seeds, almond milk, vanilla extract, and maple syrup. Stir to mix all the ingredients until combined. Add blueberries to the bottom of the mason jars. Divide the oat mixture into the mason jars. Add more of the blueberries on top and use a spoon or fork to swirl it into the oat mixture.

Let the blueberry swirled overnight oats chill in the fridge overnight.

If there are leftover sweetened blueberry jam, top the blueberry swirled overnight oats with more of the mixture before serving.

Ingredients
Blueberry Jam
  • 2 cups blueberries
  • 2 teaspoons water
  • ½ teaspoon cornstarch
  • 1 tablespoon granulated sugar
Overnight Oats
  • 1 cup old fashioned rolled oats
  • 3 tablespoons chia seeds
  • 1½ cup almond milk
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons maple syrup
Directions:

    So beautiful. Normally i just pour milk into oats and let it sit for overnight, in the morning i add 🍌 , but now i learn how to make another beautiful jar. Thanks for sharing!
