Blueberry Swirled Overnight Oats

Old fashioned oats and chia seeds soaked in almond milk overnight with swirls of blueberry jam. This blueberry swirled overnight oats are delicious and perfect for warm summer mornings.
Ingredients
Blueberry Jam
  • 2 cups blueberries
  • 2 teaspoons water
  • ½ teaspoon cornstarch
  • 1 tablespoon granulated sugar
Overnight Oats
  • 1 cup old fashioned rolled oats
  • 3 tablespoons chia seeds
  • 1½ cup almond milk
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons maple syrup
Directions:
  1. In a small bowl, mix together cornstarch and water until the cornstarch has dissolved. In a small pot, add blueberries, granulated sugar, and cornstarch mixture and cook over medium heat for about 5-8 minutes until the blueberries have softened and the juices thicken. Set the blueberries aside to cool for a few minutes.
  2. In a medium sized bowl, add old fashioned rolled oats, chia seeds, almond milk, vanilla extract, and maple syrup. Stir to mix all the ingredients until combined. Add blueberries to the bottom of the mason jars. Divide the oat mixture into the mason jars. Add more of the blueberries on top and use a spoon or fork to swirl it into the oat mixture.
  3. Let the blueberry swirled overnight oats chill in the fridge overnight.
  4. If there are leftover sweetened blueberry jam, top the blueberry swirled overnight oats with more of the mixture before serving.
