It’s been raining the entire weekend in San Francisco, and there are no signs of the rainstorm letting up. I think we’re in for a whole week of rain and gusty winds. Which means it’s the perfect time to spend in the kitchen with the oven on.

The oven is definitely not my favorite to have on during the summer when it’s super warm and the sun is streaming through the windows, creating an inferno in the kitchen. But during the winter when it’s cold outside, the warmth radiating from the oven is the most comforting. It doesn’t matter if I’m making dinner or baking desserts, it’s just so cozy in the kitchen when the oven is on. At least it is to me. Do you feel the same way?

So I’m ready to share this amazing salmon grain bowl with you. It’s delicious, easy to make, and perfect for a weeknight dinner. Plus, leftovers are great for lunch the next day too.

The salmon is flaky and tender with the most amazing flavor from the maple garlic soy marinade. Served with mixed grains and roasted garlicky vegetables, these salmon grain bowls have everything you’ll need for a delicious meal.

Preheat the oven to 400F. Lightly grease the surface of the baking sheet with nonstick cooking spray or olive oil. You may need one or two depending on how big your baking sheet is. Set aside for now.

Place the salmon filets in a large zip lock bag. I bought two large slices, and cut them in half. In a small bowl, whisk together maple syrup, soy sauce, sesame oil, minced garlic, and crushed red pepper flakes. Pour over the salmon filets and let it marinade in the fridge for about 20 minutes to a few hours. The longer the salmon sits in the marinade, the more flavorful it will be. However, you’re going to reserve the marinade to use as the sauce for the salmon later so the salmon will be flavorful either way.

Place brussels sprouts, broccolini, cauliflower, and tomatoes on the baking sheet, placing the cut side down. Add minced garlic. Drizzle with olive oil and sprinkle salt on top. Roast the vegetables for about 25 minutes until tender. Remove the baking sheet from the oven and set aside for now.

Lower the temperature of the oven to 375F.

Line a baking sheet with parchment. Place the marinated salmon filet on the baking sheet. Reserve the used marinade for the sauce. Sprinkle black sesame on top of the salmon. Bake the salmon for about 15-18 minutes. About 10 minutes per 1 inch of thickness.

Pour the used marinade into a small pot. Heat the marinade for about 5 minutes, stirring every so often. Let the sauce sit for a few minutes to thicken.

Place the maple garlic soy salmon over mixed grains and the roasted veggies. Drizzle the sauce over the salmon.

  • 2 pounds salmon filet, cut into 4 even pieces, skin off
Marinade
  • ⅓ cup maple syrup
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves of garlic, minced
  • 1½ teaspoon crushed red pepper
Salmon Topping
  • Black or white sesame seeds for topping
Roasted Vegetables
  • ½ pound brussels sprouts, halved
  • ½ brocollini, sliced
  • ½ head medium cauliflower, cut into florets
  • 2 cups tomatoes, halved
  • 5-6 cloves of garlic, minced
  • Olive oil
  • Salt
