It’s Wednesday, which means we’re already half way through the week!
I’m soo excited. Only one more week until vacation. This time, we’re headed to Denver. My cousin is graduating from Regis University so the rest of us decided that we’re making a vacation out of it. Because, why not?! AirBnB booked! But I’m having a little trouble coming up with things to do in Denver.
Honestly, most of the things I came up with is food related. No surprise though, right? On my list is Snooze for brunch, Root Down, Hammond’s Candies, maybe breweries, a hike? I need help! Please send me recommendations. I would love to know how to make the best of my four full days there.

This might look familiar. And if it does, then you remembered correctly. Several weeks ago, I went to a local shop and ordered an avocado toast and a creme brulee latte. It made such a huge impression on me, I had to make my version. Minus, the almost $10 price tag, of course.
If you live in SF, or even the Bay Area, you know that avocado toast is ridiculously overpriced. So why not make your own at home?
It’s simple, it’s delicious, and you can totally have more than one without worrying that you’re spending way too much for avocado on toast.
Fill a small pot with water deep enough to cover the eggs completely. Heat the water until it comes to a rapid simmer.
Carefully lower the eggs into the water. Cook the eggs for about 5-7 minutes for a runny yolk, cook longer if you prefer the yolks to be more solid. Start the timer once the eggs are in the water.
Remove the eggs from the simmering water using a slotted spoon or spatula. Run the eggs through cold water for about a minute. Carefully, remove the shell from the eggs and set aside for now.

Mash a large avocado until smooth. Add garlic powder and salt, and mix until well combined.
Spread the mashed avocado over toasted bread.
