Avocado Toast with Soft Boiled Egg

Avocado toast with a hint of garlic topped with a soft boiled egg and a pinch of crushed red pepper. This Avocado Toast with Soft Boiled Egg is the perfect simple breakfast and afternoon snack.
Ingredients
  • 2 large eggs
  • 2 thick slices of bread
  • 1 large avocado
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon salt
  • pinch of crushed red peppers
Directions:
  1. Fill a small pot with water deep enough to cover the eggs completely. Heat the water until it comes to a rapid simmer.
  2. Carefully lower the eggs into the water. Cook the eggs for about 5-7 minutes for a runny yolk, cook longer if you prefer the yolks to be more solid. Start the timer once the eggs are in the water.
  3. Remove the eggs from the simmering water using a slotted spoon or spatula. Run the eggs through cold water for about a minute. Carefully, remove the shell from the eggs and set aside for now.
  4. Mash a large avocado until smooth. Add garlic powder and salt, and mix until well combined.
  5. Spread the mashed avocado over toasted bread.
  6. Top the avocado toast with the soft boiled egg and sprinkle crushed red peppers over the toast.
  7. Serve the avocado toast with soft boiled egg for breakfast or as a snack.
