Avocado toast with a hint of garlic topped with a soft boiled egg and a pinch of crushed red pepper. This Avocado Toast with Soft Boiled Egg is the perfect simple breakfast and afternoon snack.
It’s Wednesday, which means we’re already half way through the week!
I’m soo excited. Only one more week until vacation. This time, we’re headed to Denver. My cousin is graduating from Regis University so the rest of us decided that we’re making a vacation out of it. Because, why not?! AirBnB booked! But I’m having a little trouble coming up with things to do in Denver.
Honestly, most of the things I came up with is food related. No surprise though, right? On my list is Snooze for brunch, Root Down, Hammond’s Candies, maybe breweries, a hike? I need help! Please send me recommendations. I would love to know how to make the best of my four full days there.
In the meantime, this avocado toast with soft boiled egg <3
This might look familiar. And if it does, then you remembered correctly. Several weeks ago, I went to a local shop and ordered an avocado toast and a creme brulee latte. It made such a huge impression on me, I had to make my version. Minus, the almost $10 price tag, of course.
If you live in SF, or even the Bay Area, you know that avocado toast is ridiculously overpriced. So why not make your own at home?
It’s simple, it’s delicious, and you can totally have more than one without worrying that you’re spending way too much for avocado on toast.
Fill a small pot with water deep enough to cover the eggs completely. Heat the water until it comes to a rapid simmer.
Carefully lower the eggs into the water. Cook the eggs for about 5-7 minutes for a runny yolk, cook longer if you prefer the yolks to be more solid. Start the timer once the eggs are in the water.
Remove the eggs from the simmering water using a slotted spoon or spatula. Run the eggs through cold water for about a minute. Carefully, remove the shell from the eggs and set aside for now.
My imperfect soft boiled eggs. But I just turned the eggs so that the perfect side is faced upward.
Mash a large avocado until smooth. Add garlic powder and salt, and mix until well combined.
Spread the mashed avocado over toasted bread.
Top the avocado toast with the soft boiled egg and sprinkle crushed red peppers over the toast.
Serve the avocado toast with soft boiled egg for breakfast or as a snack.
Enjoy!

I have tried this and love it. I also use avocado with lox on a bagel. I am allergic to dairy products and it is a delicious substitute for cream cheese.

I love avocado toast and soft boiled eggs. I eat avocado toast often, but have never added a soft boiled egg. I must try that! Thanks for the inspiration and recipe!

I will be trying this for sure! So yummy-looking. When we lived in San Antonio, we purchased avocados for $.25 for one. We became very spoiled eating them there! One of our favorite foods. Denver…that’s the area I grew up in. The Denver Zoo used to be pretty nice and there is a great park next to it. Definitely worth looking into. Casa Bonita, a Mexican restaurant was always a favorite. The area of the city isn’t great and the food there is definitely not great or very good for you. But it’s the experience of eating there. Very moderately-priced in my opinion. The restaurant has several different themes. There is a coal-mining room, a theater room, and you can eat above a lagoon and watch divers. It’s just kind of fun and our grown children went there a couple of years ago and enjoyed it. Of course Red Rocks isn’t too far away. It’s pretty spectacular to view as well, even if you don’t see a concert. Laramie Square has been remade into a beautiful, old-town-feel place to shop, walk around, and there are some great restaurants there as well. Have a wonderful time on your visit!
