I’ve been back for a day from vacation, and I’m soo ready for another one. Doesn’t it always feel like vacation is so short no matter how long you go for? I’m not ready for reality to set in, and I definitely don’t look forward to waking up early in the morning for work.
My first trip on a cruise started out well, but due to the weather, we weren’t able to explore Ensenada as much as we wanted. And the second night on the ship was a little terrible because of the gusty winds that rocked the ship. I’m so glad that I slept through most of it. Overall, it was so much fun. I just wish the trip was a couple days longer…
You can find some pictures of our Ensenada trip on Instagram, but I’ll share more photos soon on the blog. I just need a little time to sort through all the photos. I also need a little time to catch up on everything else.
In the meantime, since I feel like I’m still in vacation mode, I’m going to share with you this Sparkling Blackberry Mint Soda.
I actually had this recipe done awhile ago, but I was waiting for the perfect time to share it. And even though I’m now back in the Bay Area with heavy rains and gusty winds, I feel I need to infuse a little tropics in our lives to maybe hasten the coming of spring and summer. Because I am definitely ready for a little more sun.
This Sparkling Blackberry Mint Soda is super easy to make with just a few easy to find ingredients. It’s a great beverage to share with others. You can put it together quickly to serve for brunch or dinner or at any gathering.
In a small pot, add blackberries, water, granulated sugar, and a few mint leaves. Allow them to simmer for a few minutes until the blackberries have broken down. Remove the pot from heat and allow to cool for a several minutes.
Divide the blackberry mint simple syrup into two glasses. Pour club soda or sparkling water into the glasses. Garnish with crushed ice, mint, and fresh blackberries if desired.

- 3 tablespoons granulated sugar
- 1 sprig mint
- 1½ - 2 cups club soda or sparkling water
